Cardamom has become one of my favorite spices to use in baking and I have been routinely adding it to some recipes that don't call for it with great results! It is perfect ompliment in cherry and apple pies; almost as if it adds additional floral oomph to the present fruit flavors. If you are already adding the typical warm spices (think cinnamon, allspice, clove) to your dessert, add a dash of cardamom. It harmonizes the other spices better and adds another flavor note to that spice array.
Taking sheets of frozen puff pastry or pie dough, covering one side with a mix of butter/sugar/cardamom, rolled up and cut into spirals, then baked as cookies makes for a lovely and quick sweet treat featuring the spice.
Try a little cardamom in the batter next time you make pancakes.... Yummmmm
