For the last few weeks, I've been making my own corn tortillas. Initially just for Taco Tuesday, but I've started to incorporate them into breakfasts throughout the week. Originally just masa, salt, and water, but now I've thrown some lard into the mix and I'm pretty pleased with the results. Still searching for the best dough consistency to get bubbly charred goodness, but it's nearly there!

I've been eating a lot of beans (and sometimes rice) in various combinations.

My go-to is black beans and salsa, just chucked in a bowl and eaten over the sink like a gremlin, but if I'm feeling fancy, I'll make some rice to go with it, warm everything up, and shove it into a tortilla along with some cheese.

I also tried fake-marinading some dark red kidney beans in some nandos sauce that I picked up from Costco. It was actually really good, the beans soaked up the flavor, and when I chucked some rice in it, the rice soaked up the rest of the sauce. Not as good when on a tortilla, but not terrible either.

Another good one I did recently was chick peas with harissa, garlic, lemon juice, feta, rosemary, and kalamata olives. The original recipie I found involved actual cooking, but I'm lazy so I just chucked everything in a bowl and winged the measurements till it tasted good 😂

Over the weekend, I made veggie broth with the scraps I'd been keeping in my freezer (and a few dried mushrooms for added flavor), and then once that was done, I made Italian wedding soup with the broth, a can of chickpeas, some pasta, a can of spinach, and some chopped up pre-cooked meatballs. Oh and some thyme, rosemary, and pepper and probably some other spices. It's not as good as my mom would make but I couldn't be bothered to go find a recipe lol. (hmm. that seems to be a theme when I cook..... ) I added Parmesan when I reheated it, and it added just enough saltiness to bring out the rest of the flavors.

Beans+rice dishes and soups made with various leftovers and scraps from the fridge/freezer are my go-tos when I'm feeling lazy and cooking just for myself too. I usually use boxed broth, and dried ramen to bulk the soup up though, since I can't be arsed to make my own broth or noodles totally from scratch. ;)

p.s. "eaten over the sink like a gremlin" is relatable as well. :P

I've been trying (with on/off success - decided to do something at 235lbs, got down to 197lbs, then thanksgiving and re-addiction to sugar back up to ~215lbs, now back down to 210lbs) to reduce my weight, so I keep experimenting and looking for filling options or thing that satisfy cravings with generally low calorie counts.

Cereal satisfies sugar cravings, but is high calories and doesn't keep me filled - unless I use yogurt instead of milk. I found that using a ~1:2 ration of high-fat yogurt (Fage 5% fat yogurt) and very low-cal vanilla yogurt (Chobani 0 sugar vanilla) works really well. Instead of just carbs/sugar and liquid (milk) that my body processes quickly I get a good amount of fat/protien mixed in which is processed slower and keeps me sated longer.

I just recently started sipping cups of soup broth mix to satisfy savory/salt cravings without needing to worry about calories, not sure why I didn't think of that months ago.

Carrots are my most common go-to for fiber/filler veggie. They help keep me feeling fuller to last longer between being hungry and needing to make a meal.

Tried various options for 0-cal and very low-cal drinks: La-Croix for flavored seltzer water works for me and is cheap, and Costco has these 'Alani NU' energy drinks at 10 calories per that serve well to deliver caffeine and actually taste quite good.

I've been drinking a lot more tea over the last few days. I'm generally not a big tea person and prefer green/ herbal/ fruity things over black tea. I'm enjoying this rooibos based one called Moondrop Dreams which has lavender and citrus, including some funky fermented lemon peel. Curious to try their recommendation of having it as a latte!
