What have you been eating, drinking, and cooking?

    I am on a quest to recreate the rice we get at our favorite Mexican restaurant. It seems like "standard" restaurant rice. But it's the only rice my daughter will eat.

    I've tried various store offerings. I think the Goya yellow rice is the closest, but it's still a miss to her.

    This weekend, I tried making it in the rice cooker with: Knorr's tomato bouillon with chicken, onion powder, chicken broth (instead of water). I used basmati rice based on advice in a reddit thread.

    Flavorwise, it was pretty good. It needed more bouillon, and it lacked the distinctive yellow color. I enjoyed the basmati rice, but it was pretty different.

    Next time I try it, I'm going to increase the bouillon, add something for color (probably turmeric), and use regular white rice. If I can get some umami powder/MSG I might add that too.

    If anyone has any experience or advice, I am open to suggestions.

If you can find Adobo seasoning at the store (it's pretty widely available in the US I think -- there are a few variations with different things added but they're all fundamentally similar), that's what I would reach for.

      I usually cook with basmati rice, but the texture of the rice at Mexican restaurants is usually quite different, so I'd personally try Jasmine rice instead (which is usually what people mean by regular white rice).

      I completely identify with your daughter. When I was growing up all I wanted to eat was Una Mas's rice. So much so, that if we got takeout for dinner my mom would let me get a side of Una Mas rice regardless of the main meal we were getting.
