    I tried out this focaccia recipe! Just to be upfront: I used whole wheat flour and didn’t adjust any ratios, so this is totally my fault, but it didn’t wind up terribly fluffy. Next time I’ll make some adjustments to convince it to rise more (and I might sub out part of the olive oil, which is pretty pricey these days …), but it was nice to bake some bread again.

    I also lugged my air fryer outside to bake it, which was a nice way to avoid heating up the apartment.

      Sounds like you are 95 percent of way to making some great pizza/focaccia. I would be interested to know what you end up changing to increase the rise.

      I have a freshly bought bag of whole wheat flour to experiment with.

        I would be interested to know what you end up changing to increase the rise.

        So I’m a terrible baker, but my instinct is to:

        • add some sugar, so the yeast can ferment more effectively
        • add some wheat gluten, to get the protein ratio closer to a bread flour
        • maybe increase the hydration a little, since I left it unmodified, and whole wheat flour tends to need more than white, I believe.

        I’ll try that out eventually, but I figured I’d respond now so I can refer back to this post when I get around to it!

    I dusted off my bread machine and made some bread using the 50:50 whole wheat/white flour recipe @ISO3103 mentioned back in the bread machine post.

    We've settled on a 50:50 wholemeal / white loaf, which for me really is the best of both. 200g white, 200g wholemeal, 5g salt (1tsp), 300ml water, 15g (1 tbsp) oil, 3g (3/4 tsp) instant yeast.

    The loaf turned out great, dense with a nice crust and unsurprisingly delicious with a little butter. Much nicer than the strange white bread recipe that came with the machine. For the next batch I will scale it up 20-30% since it didn't quite fill out my pan.

    20% scaled recipe in bread machine order:

    • 360ml water
    • 6g salt
    • 18g oil
    • 250g white flour
    • 250g whole wheat flour
    • 4g instant yeast

    I did Cinnamon Rolls the other day. Fully from scratch. I think I under salted the dough because they got a resounding thumbs down from everyone.

    Well, my coworkers enjoyed them when I brought in the rejects. That said, glaze and cinnamon sugar was on point and the rolls weren't that bad. Maybe I'll try again this weekend. Maybe I'll just find an audience that appreciates me getting up three hours early to make cinnamon rolls for them. Ah hell, I had fun and tried something new.

    I recently bought an Instant Pot and made some Chicken Chili Verde and it turned out decent. Hoping to utilize the instant pot a fair bit as the idea of set it and forget it recipes are very appealing to me.

    Followed a pretty simple "recipe". I bought 2lbs of chicken breasts along with a 16oz (~500ml) jar of Salsa Verde. Simply saute the chicken in the instant pot for a few minutes, dump in the jarred salsa, and pressure cook for ~15 minutes. Naturally vent for 5-10 minutes and then shred the chicken. One thing I'd definitely change is to use chicken thighs instead of breasts. I bought breasts as the store I shopped at didn't have thighs. The taste is find with breasts but it is a bit dry. The flavors are on point though and it was great over a bowl of rice with a sprinkle of cheese.
