It sounds like you either need a stainless steel pan or a carbon steel pan.

Stainless (with an aluminium core) will conduct heat really well which will mitigate the hot spot problem. But they are not very non-stick (which can be a good thing if you're cooking meats).

Carbon steel will let you build up a non stick surface and will conduct heat better than a cast iron, but not as well as a stainless steel pan.

Both will be much lighter than cast iron.

I wouldn't recommend buying an expensive knife you've not seen in person.

I can't say anything about people wanting to bite babies... But I can offer a comment focusing on the emotional response aspect.

When I see parents with young children it reminds me of the time I had with my own. It's a very emotionally charged period, so it's possible that some of that energy just leaks out. I'm definitely more open about that energy with people that I know well, but will keep it contained with strangers.

Honestly, like you I find the fact that it exists amusing. Buy to try and give a more sensible answer. I don't follow the ISO when making my own tea, but I'm glad that it exists for social science reasons. Those sciences struggle with replication and anything that helps with that I see as a positive.

Swiss army knife is a great shout. I wish I could add a good pan, but I'm trying to get everything into a single old briefcase so I'm space constrained.

I'm trying to put together a small amount of kitchen equipment that I can take with me when we travel. And I'm looking for suggestions. I've been stung by holiday let kitchens before missing seemingly small but essential items.

    So far I've got:

    • Digital scales
    • Good sized chopping board
    • Sharp knife + sharpening stone
    • Peeler
    • Tongs
    • Measuring spoons
    • Small jars of salt, sugar, and oil
    • Coffee grinder (yes it is essential)

    Edit (community suggestions)

    • Swiss army knife
    • Probe thermometer

Any recommendations on other things you've missed in holiday houses before?

One that I keep coming back to is:

"A relationship is supposed to make you happy. If it isn't, something needs to change."

Sometimes you have to think long and hard about what it is that needs to change, it could be you and your behaviours, your partner or their behaviours, etc. but the end message is don't accept an unhappy relationship try and fix it, and if that doesn't work, end it.

    Two things to bring up.

    1. I just finished building myself a woodworking bench in the garage. I drew up my own plans for it, and it very almost matches them.
    2. The back cushions on our sofa were beginning to collapse. I bought some foam online to add to the back cushions in an attempt to re-enforce them. It worked perfectly. I'm probably going to replace the seat foam at some point because they are starting to sag. Hopefully it will save me having to buy a new sofa.
