    Honestly, nothing super healthy, a lot of pre-pared food from Trader Joes. But I'm hopefully ready to try and eat healthier at this point. Been burnt out and have been relying on low energy meals....

    I found a Sous Vide device for $10 at Goodwill over the weekend, which I've wanted for a while to aid in meal prep. I've been wanting for years to duplicate Starbuck's Sous Vide Egg Bites and save money and time there and experiment with my own flavors.

    But I also want to get into minimalist low effort healthy meals.

      If you don't mind em: beans. They're cheap, easy to cook, healthy and chock full of flavour. If I can't be bothered to cook something complex but want to cook something, I just start the rice...

If I can't be bothered to cook something complex but want to cook something, I just start the rice cooker, throw some cans together and season to taste, mostly umami (soy sauce, Woostershire sauce), a splash of sour (plain white or white wine vinigar) and some spice. Maybe add a bite like falafel or maybe some meat (I prefer vegan/vegetarian food), let it sit for a bit and you're ready to eat. Bonus: you can freeze it in very well.

    I started making mead in late April, and some of the batches are getting to a drinkable state by now, although a few months of aging will probably make them taste better. I just started my 6th batch this past weekend.

    I went to a meadery a few days ago and tried all 12 of the meads on the menu. Some of them tasted great. My favorites were a mixed berry mead, and a yuzu-mango mead. However, all but one of them were too sweet for my palate. I guess it makes sense because when people think "honey wine" they expect it to be quite sweet. It validated my decision to make some of my own that has some of those interesting flavors but is less sweet.

    My mixed berry mead should be ready to drink in about a month, so I'm excited about that.
