I love my enameled cast-iron pan and dutch oven. Yeah, food sticks a little more than to traditional cast-iron but there is no maintenance required and I don't cook nearly enough stuff where sticking really matters to worry about it. Besides, in most cases a little bit of additional fond buildup just means a better deglazed pan sauce or gravy anyways. ;)
