Paging @cadadr since they made a topic a few weeks ago looking for an overarching "theory of cooking" and that book sounds like it's pretty dang close to exactly what they were looking for.

Literally picked up this book last week after someone recommended it to me at a food expo, I am always looking for new cook books and this one does look great.

I would recommend it. A lot of people are comparing it to The Joy of Cooking and expecting it to become a classic cookbook. It's very thorough and the illustrations are great. But, I might be biased because I obsessively collect books.

A lot of fast camera cuts, and not a lot of useful information. Shame on that first point because the footage is beautiful.
