Food Escapades & Curry Fridays ! Tesco Real Food's Chicken korma recipe

this week's curry was a simple chicken korma recipe I made that I found on tesco foods' website, last place I'd expect to get a recipe for a curry hah. I'm quite happy with this experience because it's the first time in a while I've had significant leftovers after eating one of these, which means I totally ate less than I usually do. In fact, we had leftovers for over 2 more breakfasts left ! It makes me happy because I'm trying to lose a bit of weight out here... means I'm doing the good first step :P Anyhow, as it comes for the recipe, it was a quite simple recipe with not a lot of complexity to the spice mix. I do believe the added 'extra spices' it tells you to add at the bottom are real crucial for it to be extra delicious comparatively to what it would've been with just the main spices. One thing I did have to change tho was the usage of Chicken drumsticks instead of breasts as the recipe calls for, which ended up being alright as well. Honestly chicken dishes can pretty easily interchange the cut of chicken without it affecting the quality of the dish much, which is pretty great ! Another touch I found quite appealing was the use of toasted flaked almonds as a garnish, the crunchiness of the almonds made for a real nice textural contrast. Overall a simple dish and pretty by the books I think, but that doesn't mean it's any bad ! Def recommend if you're in the mood for something simple.

    Kind of offtopic, but are all your portions typically that small @TinmanJones? ... or am I just a pig who eats way too much for dinner? (to be fair, I usually only eat one big meal a day though)...

    Not super recent, but I tried banana+pesto and pickles+peanut butter for the first time a few months ago, after watching this old video from SortedFood and not being able to resist trying them for myself because of how weird they sounded... and I have to say, they were both surprisingly delicious! :P

And usually I do eat bigger portions but as of late I’ve realized that I can chow down 3-4 portions per night and I really think That is way too much ! So I’ve been keeping it to small portions lately.... except for my dad’s homemade bread hahahha. I should really lower my consumption of that too tho, even if it’s so delicious !

One of the hosts hates banana and still loved the pesto one too though, so who knows, you may enjoy it as well even though you're also not a banana fan.

        And yeah, bread (in all forms) is the best. I feel zero guilt in stuffing my face with it! :P

    I'm not a fan of chicken dark meat generally, but when it comes to curry and other stew recipes, substituting white for dark is typically a pretty big improvement. But rather than use drumsticks, I would use cubed thigh meat. The texture is a little nicer and you don't have to worry about bones and gristle.

      Yeah, white chicken meat can get surprisingly dry and almost chalky when cooked a long time submerged in a liquid, whereas dark meat holds up a lot better. That's why I typically use dark meat for chicken soups and stews too, but if I do use white meat I usually either throw it in at the very end (just long enough to cook through), or keep it on the bone to start (which helps prevent overcooking it) then pull it out and debone/shred it at the end.
