I'm always disappointed when companies don't go farther with their re-releases. They are selling a $60 game, and yet I feel like they didn't do remotely enough to justify that price tag. Sure it is 3 games, but they didn't update it remotely enough for me. Specially when modders working for free or via patreon can do just enough to modernize the game but not too much to ruin the original experience.

But, I can't really justify my positions too strongly, and don't feel burned having spent $50 on this ($60 preorder, Amazon refunded $10 after a price drop).
The only thing I feel needs addressing is the 60fps SM64 issue: his complaint is "feel," but I think it's alright if the game is at 30FPS. Fractional FPS scaling tends to work out alright, and major tweaks to N64 games like that have a tendency to break games. Heck, I'm running an HD, wide screen 60fps Sunshine in Dolphin and while the core gameplay works fine, I wouldn't pay $20 for the experience because of all the little issues that emerge.
I don't even blame them for not retexturing everything, they only have 4GB of RAM to work with, and there is some potential for ruining the experience in upscaling and retextuiring everything. My 3.8ghz i7 +16gb RAM + GTX1060 doesn't like Mupen64-Plus with 4x scaling ( to get close to 1080) and OoT3D textures, I can't imagine a similar load on a Switch.
I think the core thing is that the games are playable. Could they have put more effort into the appearance? Definitely. Can they fix these issues? Definitely, but they only will for new releases, most likely, and I think they'll do more re-releases with this technology. It's a miracle they adapted Galaxy without people rioting, to be honest, and it may be a major reason I'm happy I bought this. I just need to get my Switch back.

I got the game yesterday and played Sunshine for a couple of hours last night. I have been wanting a remaster for years now, so I'm beyond excited to have a way to play it.
I'm generally someone who isn't too concerned with the technical aspects of games, but I will admit that the game's presentation is a point of friction for me. The low framerate plus the "heat haze" effect is mildly uncomfortable. It doesn't outright give me motion sickness, but it's off-putting in a way that reduces my overall enjoyment. It was acutely bad when I first started playing it and then over the course of the evening I got used to it. I'm sure after a couple of hours more into the game I'll be so accustomed to it that it'll be pretty much invisible to me, but it did make the beginning of the game less of a joyous excursion into a "new" 3D Mario game and more of an uncomfortable trudge.
If the world and gameplay weren't what they are I would just move on, but I love 3D platformers -- and the Mario titles in particular -- so Sunshine will definitely see more playtime from me.

That said, I played some more today and have pretty much gotten used to it, so it's becoming a non-issue for me.
Have you compared the official release versus your setup through Dolphin? I'd be interested to know how similar/different the two experiences are.
I don't have my switch, so I'm using this video as a reference. I can only assume the controls are tight, as they are on Dolphin. If I can do it on Windows with a XBone controller and no tweaks,...

I would love to get my hands on the 3DAS SMS rom, and am actually downloading the 3DAS ROM for that purpose (as well as for when somebody manages to pry the Galaxy ROM out of it).
For the visuals, they're good enough, but I'm not particularly picky and they've only got 4GB of RAM to emulate a friggin GameCube on. When I played pimped-out WindWaker, I only updated the characters and HUD because those are the most important elements. It sort of looks like they did that with this, which I'd say is good enough, the static stuff looks crisp and movement keeps you distracted from the environment. I would have wanted a "Legend of Zelda: Collector's Edition" style remap of the FLUDD controls to map to the Switch buttons, but that's a nitpick. As a side note, I think they did the same to Galaxy and you can check it out in this video I found. They're both really good looking games, and the first party GC games already had nice textures anyway, so I don't think they needed to touch up too much, unlike SM64, which they seem to have done a full retexture on, and looks pretty good.
