As far as I recall, the pluralisation by vowel change is something that has been (at least hypothetically) traced back to Proto-Indo-European. I'll have to dig through my books to find the reference, but I seem to remember someone theorising that it was the only way that PIE did plurals, and that the other methods came in only as a result of intermingling with other languages
