I love these sorts of drastically genre-shifting covers, there's something that really tickles my brain when you take a song so far out of it's normal context. I've been following Alex Melton on youtube and I really enjoy his covers for that reason. He'll take a stereotypical 2000's pop-punk song and transform it into a stereotypical 2000's country hit instead! It really just gives me the giggles.
He also does some really impressive videos where he'll cover a song in the style of a particular band (usually Blink-182) and it's really crazy to me how well he hits all of the style markers and makes it sound just right. Here's If Blink 182 Wrote "One Week"
Country and Altpop were always siblings, but he certainly has a talent of making one into the other. "Missouri Business" is an incredible cover, but I couldn't really get into "in Too Deep"...

His cover of Lit - My Own Worst Enemy is just absolute perfection.
