I think it's totally fine. You're in somebody else's car, and everybody benefits from having authoritative recordings of everything going on in the vehicle so that if you are accused of doing something, as a driver or passenger, there is evidence of what actually occurred.
There are still the usually tech company issues of who has access to the data and what it will really be used for, as opposed to what it is documented as being used for, but in general I'm not opposed to the idea. It also saves drivers needing to CYA with rear-facing cameras, etc.

As soon as the ride starts you’re given the option to record the audio. In fact I feel safer taking a Didi vs an Uber because of the safety features they offer.
