It would be useful if you can find any information about how exactly that extension works, but from Tildes' end it just has CSS that sets the font for the html and body elements (basically ones that mean "the entire page"), which should be pretty typical.
You might also want to see if there are any other extensions available, they might work slightly differently and be able to do it successfully.
I don't know if this app needs a particular implementation, but I did find on Firefox that I had to uncheck the "allow sites to use their own font" box to customize it. Safari doesn't appear to...

Hopefully a simple account preference toggle for site font would be enough rather than a specific list of site fonts or a custom implementation for this particular app.

However, unfortunately, it would appear TamperMonkey and other Firefox extensions that can be used on Desktop and Android are not available on iOS. I don't have an iOS device so I don't know how/if you can use userscripts at all. Let me know!

It works on Wikipedia however not on Tildes. I suspect, though am not certain, that somehow Tildes may be inadvertently limiting this somehow. If so, can this be changed?
Can Tildes get a new feature to allow users to specify a custom font from a given set of possible fonts? Would be greatly appreciated!

Tbf, that extension blows. I recommend Cascadea, which works a lot more consistently in my experience.
