Have there been any shows that have stayed high-quality when they run that long? I feel like most shows tend to hit their stride at about Season 3 or so, stay good for 1-3 seasons, and then it's all downhill if they keep running for longer than that.
The Simpsons might be one of the only exceptions, but even then I think it's pretty accepted that the later seasons are weaker than earlier ones. Maybe South Park? I don't watch it, but I get the impression that a lot of people think it's still been pretty solid.
30 Rock was consistently very good for the seven seasons it ran. Parks & Rec squeezed a solid good six seasons after a bad first one. But eleven total seasons? I don't think any show has managed that.

Not many no. I would say South Park has managed it. I certainly think keeping the episodes per season limited to no more than a dozen is a good way to keep it fresh.

South Park has for sure... they are still relevant, have continued to evolve with the times and are pumping out amazing satire even today. I would add Futurama to that list as well.

I must say, I hardly ever feel the post-season-3 decay, except when essential cast members leave the show. I liked Arrested Development season 4, for example.

I've been watching the "remix" version of Arrested Development season 4 that came out last week. I'm honestly not sure what I think of it so far, but it's also been so long since I watched the original version that I can't directly compare. It's really interesting that they re-edited and re-released it though (and completely removed the old version), I don't know if something like that has ever happened with a show before.

Yea Futurama holds up, the comedy central seasons weren't as good but I would say they were still good.
