Mayim Bialik did really well in her last half. So far my favorites have been Jennings and Producer Mike. Mike Richards was actually better than Jennings, but I doubt he'd want to go back to being a host of a show.
I really think Burton will do well. For me, the thing that defines a great host is how they respond to negative answers. Dr Oz would say 'no' with a relatively harsh, dry tone, where Katie Couric was just as bad but on the other end of the spectrum -- too nice.
Having LeVar Burton host Jeopardy is not something I knew I wanted before.
