I loved episodes 4 and 9 in particular. I thought their visuals and sounds were great and both were innovative story-wise. Kevin Penkin did the score for #4. He's also worked on Into the Abyss and Tower of God. I think Science Saru hit their element in #8. They simplify character designs to emphasize movement and it works here, capturing some of the manic animated energy I got from The Night is Short, Walk on Girl.
I liked episodes 1, 5, 7, and 8. I was surprised by how much I liked 8, especially its emphasis on colonialism. 7 was really enjoyable and I liked the more muted colors it used. With 5, I really liked the robot designs and sci fi ideas, but I thought the story was a bit generic when it focused on the jedi. I was looking forward to 1 the most based on the trailer, but I was disappointed. It looked pretty good, but the characters were too stiff and didn't emote as well as I was hoping - it seems like they either used a filter or rotoscoped over CGI characters directly. This worked well for some of the backgrounds though.
I disliked episodes 2, 3, and 6. All of them had serious pacing issues. 2 had one of the worst drawings of Jabba I'd seen as well as the story being half-hearted. I was hoping to like 3, based on Promare, but the story was garbage and the action was stilted. 6 looked kind of good, but again, the story didn't really stick together and I didn't feel any momentum in the fight at the end.
I'm pretty pleased with this. Some hit, some didn't, but that's half the fun. I hope Disney plans a season 2.

Currently, episode 1 is easily my favourite of the ones that I've watched so far. The unique visual style takes a little bit to get used to, but it's definitely beautiful. Dialogue is minimal and to the point, which I really appreciate.
Episodes 4, 5 and 7 were also pretty good as well. Both had a more standard anime-y look, but overall pretty solid. I personally prefer 7, but 5 is definitely around the same level of quality, with episode 4 coming in close behind.
Episodes 2 and 6 weren't bad either, but just weren't really my thing. Both definitely lean into a cuter anime style than the other ones, with more whimsical stories as well. I'm not against whimsy in Star Wars in the slightest, just this kind of anime style doesn't really do it for me.
Episode 3 is very anime, by which I mean it's 10 minutes of yelling.
I'm looking forward to watching the remaining two episodes later this week, they should be a good time if the rest of the series is any indication.

I've only watched two. The fiance wanted to watch the Trigger episode. It was "Trigger Anime Short: Star Wars Edition". I did like the aesthetic of it, though Trigger's animation is honestly a tad too sloppy for it IMHO. But the combination of the plot, presentation, and general style just screamed "THIS ISN'T CANNON" louder than anything else I've ever seen before. It's got a lot of things that I might have liked elsewhere but I didn't really think it was good as a Star Wars short specifically because it's so drastically different from anything else we've seen before.
I also watched the Production I.G. one, and I generally liked it, but It really felt like it would have been better as a limited series rather than a short. It had just a bit too much plot for it's own good. I was watching it late at night and it ended up putting me to sleep. 🙁
It was a bit weird that both of them focused on Kyber crystals so much; it was literally a part of Star Wars that mattered so little to me that I completely forgot about them and thought it was weird when one of the characters randomly decided to put one in their lightsaber.
I think that if the others can also focus on original characters and stories, I'll generally lean towards liking them. The only big problem I have with Star Wars media is when they make esoteric movie details into the entire plot, or that so much of it seems to be built around redoing what they've already done. I need more Mandalorian and less Episode IX.
