Tomorrow, for the fourth of July (which is also the anniversary of my starting my medical transition!) I'll be making beef back ribs with pineapple salsa, potatoes au gratin, and some kind of cocktail. Very heavy meal, which is a big departure from what I've been cooking lately. Lots of light, summery stuff that doesn't make the kitchen unbearably hot, like watermelon gazpacho, spaghetti with mint+cucumber pesto, Greek salad with yogurt-marinated chicken skewers, etc. Yesterday I made my grandma's recipe for German potato salad! She gave it to me recently; I am not in touch with my family, due to their being transphobic, but my grandmother reached out and has been very sweet and, when I mentioned my cooking, wanted to share her recipes with me. Apparently I loved her potato salad as a kid and I gotta say, the recipe really holds up.
My boyfriend and I have been lately really enjoying couscous, kielbasa, and rosemary. It's such a simple meal to make and yet its our favorite.
Kielbasa with garlic is so good. If you ever come across a polish shop that offers them, you have to get some. Your whole fridge will smell from them until you finished it, but it's worth it.
I had great Couscous salad with tomato and parsley from a workmate today, but without any sausage. It was very tasty couscous though and I ate a little bit too much and felt very full.

Honestly, I don't mind good food smelling my fridge.
I keep seeing couscous used more and more with greens and I'm tempted to try it. So far I've just been using it without a protein. Tomato and parsley sounds like a good start.
This will sound so simple and lame, but raw veggies! I'm trying to cut some fat from my belly, and I've found that just keeping a bowl of mixed vegetables in my fridge and pairing with my favorite dip is a great meal replacement. Especially during hot summer days, cold, crisp veggies hit the spot.
For the past couple summers, i've been working on dips:
On vacation with my family and I made them both veggie and shrimp tacos. Sides of guac, chopped onion, cilantro, sour cream, salsa, pico, and quick pickled red cabbage.

And for the veggie tacos I just saute together one onion, some baby portabella mushrooms, a bell pepper, garlic and a can of black and pinto beans (added at the end). Season with cumin, chili power, onion powder, garlic salt, pepper, cayenne. Serve on corn tortillas.
It's quickly becoming too hot to cook. Tonight I have half a rotisserie chicken pulled apart. I'm going to add edamame, soy sauce, gouchjang and sesame oil to make lettuce wraps. I might get a little more creative with the sauce (open to suggestions!). I might heat up some frozen broccoli as a side to increase the veggies and help it last a few meals.
I've been working on the "Perfect" French fry.
The idea is to get it down, and make batches of it, so I can have fries that are delicious, and not shitty process.
My income took a hit recently so trying to eat cheap and healthy. I've been making overnight oats for breakfast lately and my life is changed. I didn't think oats were that good for you, turns out they're full of fiber. I also add chia seeds, blueberries, a little bit of honey, and peanut butter with the oats and oatmilk. It keeps me full all morning and it tastes good and is really cheap.
For the next few days I am going to be eating a very healthy meal of golonka and fried beets. I like to drizzle mine with a thin layer of honey and bake it until the outer layer of skin is crispy. Also goes well with hot mustard, rye bread and butter.
Have just come off a solid three weeks of entertaining friends and family at my home!
Lesson learned: Kirkland Signature (Costco) blanco tequila and London dry gin mix well and are a great value. Whether or not they are Hornitos and Bombay Saph is impossible to say, but it's certainly a possibility.
Discovered coconut rice, which is basically rice cooked in your usual way with coconut milk or coconut water added and a cardamom pod or two. It makes a fantastic porridge with mango and lime, and I look forward to serving it with grilled Hawaiian chicken and pineapple slices.
Brisket. Costco has it for $3.49/lb in 6-15 lb pieces. I haven't had the call to BBQ one until family came up this weekend and it was nice to know I haven't lost the touch.
Supper tonight is cobbled together: chicken drumsticks with Guinness BBQ sauce in the air fryer, then a couple of little zucchini, an onion, a fistful of fresh oregano from the backyard, and some smooshed tomatoes fried up in a pan and the whole thing served over rice.
I bought a pair of cast iron pie cookers for the weekend and they've been absolutely amazing.
We filled them with pizza sauce, pepperoni and cheese to make pizza pies. We filled them with peanut butter, bananas and marshmallows to make dessert pies. Basting the inside with butter makes things go smoothly, but even skipping this step has been fine.
They cook up quickly and easily, with two sets I can be emptying/filling one while the other cooks.
Definitely would recommend it to anyone who camps! They're a great investment and extremely versatile.

I've been considering it for about a year because I drink a ton of carbonated water, but have always held off because I've seen so many negative reviews. However, I couldn't be happier. I got a used one on facebook marketplace for $15, ordered some mineral supplement drops, and got something pretty close to san pellegrino/perrier on the first try.
