    So, I tried my hand at this recipe to use some Tofu I bought. A version of Chinese Takeout Fried Tofu with Broccoli and Carrots. I lacked Broccoli and Carrots, so I used Bell Peppers and Leek...

    So, I tried my hand at this recipe to use some Tofu I bought. A version of Chinese Takeout Fried Tofu with Broccoli and Carrots.

    I lacked Broccoli and Carrots, so I used Bell Peppers and Leek instead. The important thing though was the sauce. I used Oyster Sauce and a mix of light and dark Soy Sauce to get a hint of that Chinese restaurant flavor.

    It turned out pretty good. A nicely crisp tofu and crunchy bell peppers made for a pleasant meal.

    Notes for next time: have broccoli and carrots on hand; want to try some Sherry out Xiaoxing wine with the sauce mix.

      Shaoxing wine is definitely worth it if you like cooking Chinese food! It's a more common component than even oyster sauce in my experience.

    Every year, on my birthday, I make a huge lasagne. I don’t know how the tradition started but it’s been going for almost 10 years now. Recently I discovered that if I avoid gluten I feel a lot better. So I tried gluten free lasagne sheets. Most gluten free pasta has been awful but these were absolutely fine. I used a recipe from Gaz Oakley and my partner and I made enough to feed about 18 people. It lasted 4 days in my house 🤣

    I made a cheesy stroganoff-esque macaroni casserole last night with lots of mushrooms and onions (caramelized nicely and deglazed with a splash of red wine) that went into a sour cream / dijon / cream cheese / mozzarella / pepper jack cheese sauce. With ground beef and bacon bits, jalapeno diced small, and more cheese and panko on top to crisp up. Filling as hell but it was really tasty. I've been really loving mushrooms lately.

    With a nearly two year old daughter I've found that cooking big lavish meals is something I can only really do at the weekend but me and my partner have been using Simply Cook the past few weeks and we've both loved it.

    It's a meal delivery service that only sends you little packets with 3 pots of herbs and spices that you need to cook a meal. You have to supply the other ingredients which are generally pretty simple like chicken breasts, prawns, fish, carrots, potatoes, peppers, coconut milk, pasta, rice etc. They're always pretty quick as well, with most meals being ready in 20-40 minutes.

    It allows us to have varied, fun meals without having to buy jars or tubes of spices or herbs that never get used again and sit in the cupboard for a year or two before we have to toss them out.

    Tonight was a thai red curry which was really tasty, Friday is crispy beef noodles which we've had before and was also really nice!

    Started with this recipe for a lamb burger spicy cumin lamb burger but turned it into a stir fry. I took the original ginger and garlic and hot pepper from the burger and added cabbage, bell pepper, mushrooms, kale, brocoli to the ground/minced lamb along with some hoisin sauce. It came out pretty tasty.
