What have you been eating, drinking, and cooking?

    It's been a while but I'm going to make these spicy noodles. These are generally a staple for my household because they're quick to make and very yummy for the effort. My partner and I don't have a lot of free time currently to cook anything too involved, so quick meals are at the top of the list. Additionally, I quadruple the recipe and cook it in my big wok and I have a great meal for the rest of the week. If you're interested in these, they go well with pretty much anything. Just throw in some veggies before you cook the eggs.

    If anyone has any other recommendations for quick meals please let me know!

      I regularly make basically the same kind of dish, but with Chow Mein, instead of Lo Mein noodles. The ingredients of which are typically just whatever meats/vegetables I have in the fridge that are about to go bad, combined with some fried egg. :P

      But I also generally prefer a Cantonese style umami packed oyster and soy sauce base, instead of a spicy sriracha and soy base like that recipe. Mine works great with scallions, but I don't know how well the oyster sauce would work with cilantro.

    Tiny portions of very bland food because chemotherapy and immunotherapy fucking suck. I'm focussing on lower fat because that seems to help. There's something called "BRAT diet". That's Bananas, Rice, Applesauce, Toast. I'm mostly eating bananas on toast (no butter, but a bit of flaky sea salt on top) and rice with tiny frozen veg cooked in.

    And then for a treat there's an Italian deli just down the road and they do great coffee. I'm trying alternative milks and I'm getting used to oat milk lattes. (Oat milk may be the wrong choice for coffee.) They also do amazing pastel de natas and cannoli - these are both tiny (for coffee shop cakes) but that's great because it's a delicious sweet treat and it's just the right size for me at the moment.

      Your self control is admirable. Whenever I have pastel de natas or cannolis (both of which I absolutely love) I end up eating 3-4 of them. :P

      pastel de natas and cannoli - these are both tiny (for coffee shop cakes) but that's great because it's a delicious sweet treat and it's just the right size for me at the moment.

      Banana on (buttered) toast is one of my comfort foods. When i was a kid, I'd sprinkle sugar on top. Too sweet for me these days, but it's never crossed my mind to go the opposite direction with salty.

    I made this really great, and easy, lemon curd recipe, and I've just been going to town on it. My friend gave me a ton of lemons from her mom's tree, so I decided to make lemon curd. This is the recipe: https://www.fabfood4all.co.uk/grannys-quick-lemon-curd/ for anyone curious, and I did strain it at the end to make sure I got out all the lemon zest and any curdled egg (which was very minimal). I highly recommend it, and I'll be making it again, and even using this method with other curds in the future.
