    Outside of the absolute banger of a winter soup I shared with DefinitelyNotAFae, my partner and I have been on a cozy food bender. Ignoring this abomination, everything has been phenomenal. We've done shepard's pie, meatloaf, minestrone, and been going absolutely bananas with squash/pumpkin. The other main highlight was a pumpkin Bolognese from the 6 Seasons Cookbook (which is the only cookbook I've ever felt was worth the price!). Everything from that book is weird and magic. If anyone is interested I'm happy to make PDF copies of any of the recipes from the book and send them to you. Back to the Bolognese. It was unbelievably rich and delicious. We had visited friends living in northern Italy last January and absolutely gorged on delicious pasta, and while we didn't quite have the noodles you can get there, this sauce rivaled anything we ate on vacation. We subbed out the pumpkin for a Kabocha Squash - as that's what we had on hand from the farmers market - and it was beautifully creamy. Uhhhh, I'm thinking about making it tonight now.

    Outside of that we've been getting experimental with desserts. We went apple picking - again crutches adjacent activity - and ended up with plenty for baking. My partner made an apple strudel with cream cheese - which I was not confident about - but ended up being delicious. I made an apple gallette that was to die for. I got extra bold as our local farmers market started selling sugar pumpkins and tried making pumpkin pie from scratch. I used 3 recipes to make it work 1. Pumpkin puree for the filling 2. Filling, 3. Crust. It was a bit of a chimera. The pie itself was pretty good, but even better was the weird concoction I made from the excess filling. I had like 5 cups of leftover pumpkin pie filling, so I laid a sheet of puff pastry in the bottom of a loaf tin, poured the filling mixture in, and then folded the excess pastry over the top. It ended up making a flaky, tasty, little loaf thing. 10/10 would make again.

      Oh, that pumpkin bolognese looks really lovely. Thanks for the inspiration, I have a couple pie pumpkins I need to use but havent felt like baking.

    Also accidentally bought some dried red lentils instead of green ones, so I need a recipe for those. Caveat that my partner doesn't love Indian food (he isn't sure which seasoning it is, so I'm easing him in with some frozen butter chicken until I can figure out what he likes).

      *Lots of variations, but I typically do: butternut squash, onions, (garlic), sage, thyme, ginger, pepper, nutmeg, broth, butter, plus cooked red lentils.

      Oh man, I literally came into this thread to post this recipe. We have been having an absolute blowout of autumn inspired soups and this has been far and above the best thing we've made. It's a pretty basic and easy recipe, I think it took us about 20 minutes all in, and just wow. We added a little green chili for extra spiciness but ended up barely noticing it. 10/10

      Sorry that it’s not a soup. But in case you want to use them up in a jiff, red lentil bolognese is a tasty, non-curry recipe that uses a lot of lentils. If you want some meat in it, cutting in a little ground beef would go a long way (just a smidge would get the flavour in the dish; I don’t think adding a lot will do much besides add more beef).

      It was hearty and warming and tasty as heck. I made it at first just to use up some leftover potatoes, and the household liked it so much it became a repeat favorite. I just used dried minced onion and garlic powder at first, but honestly when I tried using fresher alliums I didn't notice a whole lot of difference (perhaps I'm just a pleb). I also didn't bother to peel the potatoes before cubing, but I like potato skin and I thought it enhanced things.

        Mmm sounds good, we just had a cheesy bacon potato soup last week and I finished off the leftovers tonight so this is well timed. All soup is fall themed I think (or most soup maybe)
