    The first Techniques episode Bourdain did for No Reservations (S06E11) was excellent. This is basically the same advice, but No Reservations mentions brushing the steak with butter after the rest....

      That is a great scene. It is a great regret of mine that I never got to eat at Brasserie Les Halles when Bourdain was still executive.
