I want to recommend this channel because:
0. TL;DR is: The content is lean: meaty with little fat. It's very to-the-point: "hello, this is what we'll be talking about today, this is the thing, this is how and why we do it (authentically), here are alternative ways to do it outside China, and this is the end product."
It's made by a couple living in Shenzhen, China. The Chinese wife is the culinary brain who knows the ins and outs of Chinese cooking, and the American husband does a fantastic job of explaining Chinese cooking for a non-Chinese audience.
They explain and walk through authentic Chinese dishes and recipes
They explain ingredients, methods, cookware, regional variations and differences, and cultural contexts.
They explain what effective substitute ingredients, methods, and cookware a non-Chinese home cook probably has access to at/from home.
Explanations are clear, straightforward, and focused on the food. Little jabbering about what went on in their days.
Everything shown on screen is thoroughly explained. They tell you what they're doing and why. No quiet ASMR-like scenes where it's unclear what it's going on and where it's leading to.
Camera is focused on the dishes, ingredients, and techniques, not on people.
No generic background music.
