I'm sure there is more involved in living with Alphagal than I know about.
I've seen headlines about new breeds of peanuts and grapefruits being developed for people who can't eat them. My intuition is that price and availability will be factors and people who have been living with those allergies and intolerances will not buy those products beyond trying them out for the sake of novelty.

I make a shake using half a box of silken tofu, about 1 1/2 frozen reallly ripe bananas, cocoa (I use 1/4 cup, but you can use less or more to taste), and 1/2 cup of almond milk.
Whir it up in a blender and enjoy.
You can also use or add peanut butter, and/or maple syrup. Enjoy Life mini chips are a good add as well.

FWIW, at least in the area I live there are several brands of vegan ice cream that do not use coconut. SO Delicious uses cashews. Oatly uses oats.

There is a popular and easy looking recipe on YouTube called "Nice Cream" - a mock ice cream made out of blended bananas.
