    I have a friend with Alphagal so I find this story interesting.

    A disease that forces you to make healthier choices and better choices for the environment.

    To be clear:

    1. I would not wish an autoimmune disease on anyone
    2. I'm sure there is more involved in living with Alphagal than I know about.

    I've seen headlines about new breeds of peanuts and grapefruits being developed for people who can't eat them. My intuition is that price and availability will be factors and people who have been living with those allergies and intolerances will not buy those products beyond trying them out for the sake of novelty.

      I would love a new breed of coconut that doesn't make me sick and itchy. It's supposed to be so good for your skin and hair and for making vegan ice cream. If I could eat coconut I might actually be able to drop dairy for good.

        FWIW, at least in the area I live there are several brands of vegan ice cream that do not use coconut. SO Delicious uses cashews. Oatly uses oats.

          I'm in a small town in Sweden, so my options are somewhat limited. That they have multiple varieties of vegan ice cream at all is impressive. I think they have an oat based on at the bigger store about a half hours walk away, but I prefer to buy ice cream close to home.

            I'm not vegan, but I have developed an escalating intolerance to lactose as I've gotten older. There's a lot of room for overlap in the non-dairy and vegan ice cream area. I've tried a bunch from the local grocery, most of them have all been really tasty.

            I haven't tried it. There is a popular and easy looking recipe on YouTube called "Nice Cream" - a mock ice cream made out of blended bananas.

              I make a shake using half a box of silken tofu, about 1 1/2 frozen reallly ripe bananas, cocoa (I use 1/4 cup, but you can use less or more to taste), and 1/2 cup of almond milk.

              Whir it up in a blender and enjoy.

              You can also use or add peanut butter, and/or maple syrup. Enjoy Life mini chips are a good add as well.
