    I agree, money does make the difference in grinders. Obviously when you go from hand-crank to electric, the price-to-quality jump is going to be a MASSIVE leap.

    If you can get by with using those muscles, I would 100% recommend a 1Zpresso J-Max. The reason to get the Max is the ability to do 30g+ of beans at one time. For pourovers, depending on your ratios, that's HUGE. This hand grinder will outclass, with some effort, most of the electric grinders you'll see until you start spending $500+, and for espresso even more. That grinder could allow you to dabble in espresso down the road, if you so choose.

    If that's just not an option, the Baratza Encore is a good choice. The Fellow Ode is a good choice. There's no shortage of grinder options that can handle pourover. I believe James Hoffman has done multiple videos comparing grinders for pourover, so my first recommendation would be to look through some of that content.

    I use a Niche Zero, and it does well enough for espresso and pourover. My next upgrade in grinder will PROBABLY be a Lagom P64, but who knows when that will be! Maybe something better will be on the market at that price point by then!

    The Chemex produces a much different texture and SLIGHTLY different flavor than a V60. The filter thickness has a lot to do with it.

    I do love the idea that things are posted in larger communities, and the posters are expected to use TAGS to separate out their discussion further.

    I haven't been here long, admittedly I guess I'm one of those refugees. Even still, my very first thought upon using Tildes was this:

    Why can I not subscribe to tags?

    Imagine, I could unsubscribe from ~hobbies if I want, but I COULD subscribe to the #gardening tag. While, yes, people will be expected to post their gardening question or thought in the right group, people can then start to aggregate the topics which are truly important to them as the member count starts to scale upwards. I might want to subscribe to tags such as #coffee, #espresso, #bonsai, etc. and I would be able to engage in these discussions without having to search.

    Tildes could then start to build tag suggestions (either based on post, or maybe even allowing the community to recommend tags!), or even just a top list of tags, so new users would be able to easily find relevant discussions they want to take part in, while not really breaking down the ideas of groups as they stand right now. This would also start to allow the fine Admins running Tildes to recognize when a discussion is SO BIG that it truly deserves it's own group, so we aren't creating a ton of groups that are unnecessary and bloat the site.

    I'm not saying they are perfect, but we already know that Windows has these backdoors. This at least elevates MacOS in my mind in terms of security of your data. Apple fought the good fight on that one.

    I've got a Lelit Bianca V2 paired with a Niche Zero. I love them both! My absolute go-to beans are Fresh Perspective by Greater Goods Roasting. Amazing beans, never disappoints. They are lighter...

    My absolute go-to beans are Fresh Perspective by Greater Goods Roasting. Amazing beans, never disappoints. They are lighter roast so brew them a bit hotter (I shoot for 96c, 205f) and if doing espresso I've dialed into 1:2 ratio w/ 18g of beans and try to finish out around 42 seconds. YMMV, obviously.

    Always down to discuss coffee, espresso, or offer any advice! I learned for a couple of years on a Breville Barista Express, so I learned how to get the best cups I could out of that thing.

    I'm extremely happy to be here and I'm super excited to be a part of this community. I love the look and feel of Tildes, especially since it looks so similar to old-style Reddit which I LOVE.

    However, yeah there's a ton of very niche subreddits I'll still browse on the web w/ RES for as long as possible. There's just no way, without people being able to request groups somehow, that tags will cover every possible niche community.

    Where can I connect with people to discuss bonsai? Well bonsai could be it's own group, since it's so specific, but then it could be grouped with a larger group called "gardening". In reality, it's a hobby, so it can fit in ~hobbies... but hobbies is just so broad that any connection attempt to others will just slowly sink into the ether.

    Without Reddit, the ONLY other places to connect with others to discuss bonsai is legit either Facebook or old-school forums. I'm still a part of a few forums, but I'd rather not have to be part of so many forums anymore. I'm hoping that maybe Tildes could slowly grow to cover some of these niche groups. Either way, I do love what we already have!
