You joke, but I did put some serious thought into it and realized that the way I use Twitter was mostly to connect with friends I know in the real world. I have other venues (previously Reddit, now Tildes and a few other forums) where I talk with anonymous strangers.

But to reply seriously: when I joined Mastodon I picked an instance that I was interested in interacting with on its own merit, just like joining a place like Tildes. Federation is a big part of, well, the Fediverse, but your local instance is going to be the biggest part of it.
So my answer would be whichever instance has the most people you find cool.

access to the Fediverse, much like your e-mail provider gives you access to the email network, and
a curated experience, much like your e-mail provider curates your experience so you don't see tons of spam
In many peoples' opinion, https://mastodon.social/ is not very good at the latter, and has generally so lax of a moderation team that some other instances actually block it outright.
It's definitely OG, though, in the truest sense - it is the Original Gargron.

Would be interesting to have some kind of twitter bridge setup where you can read and maybe reply to stuff on twitter from mastodon.

can you switch your profile to a different instance? Or do you have to create a new profile?
There is a way to migrate, but you lose some things. I did it a few years ago when I started my own instance.
I'm personally a fan of counter.social because I've been there the longest and I like the people who hang out there. But I haven't explored much.
