    For thanksgiving, green bean casserole is a mainstay here. For those not in the know, it's basically cream of mushroom soup mixed with green beans and you put french fried onions on top, it's great! Well, cream of mushroom soup has milk in it and half my family is vegan. So I used this recipe for a vegan version, which basically uses a vegetable based roux as a base that you then add veggie broth and seasonings to, which I used for both the casserole and the gravy for the meal, and I honestly prefer it to the traditional mushroom soup recipe. It had much more flavor than cream of mushroom and it had a good saltiness to it. I recommend it!

        So, every Minnesotan I know insists that it's "hotdish", yet I've never seen someone call it "green bean hotdish", only "green bean casserole". We're heretics of our own rules.

    I made shrimp etouffee for the first time. It was my first time making a roux darker than a blonde roux, and I used a wok because my husband stole the big pot to make chili right before I started....

    I made shrimp etouffee for the first time. It was my first time making a roux darker than a blonde roux, and I used a wok because my husband stole the big pot to make chili right before I started. It was the only other pan big enough for the recipe. It was much easier than expected and is delicious, with the exception of the onion being diced too large. I dislike large onion chunks, but wanted to use some leftover chopped onion and I regret it. I also added a bit too much due to my onions being huge. It's so much ONION. I can't stop burping up onion flavor and it's not fun.

    This is everything I’ve had in the past week, basically.

    Eating: mushroom and potato tacos, pretzels, hummus, cheese and bean pupusas

    Drinking: soda, tea early grey hot, and beer. Mostly the latter.

    Cooking:

    The most interesting is the mushroom and potato tacos. I’d have never thought of it but a local restaurant offers them and it’s one of 3 entrees that I’d order from them. So I tried it. It’s very, very good and I think easily replicable at home.

    My standard breakfast is currently a variation of avocado toast:

    Two slices toast with Guacamole on top, 1 hardboiled egg sliced up and put on top per slice, then roasted red pepper hummus spread over the eggs and finally some hot sauce on top (either Cholula or Franks Red Hot).

    Some carbs, good diverse source of proteins and fats. Filling and keeps me feeling sated way longer than a bowl of cereal.

      I love the boiled egg / guac combo. The flavours are so good together and they end up being similar in consistency when they hit your mouth.

    I pan fried a salmon fillet in olive oil with skin on. Super crispy skin and outside, slightly rare in the thickest part inside. Heavenly.

    It's starting to become a tradition in my house but I'm in the process of making the leftovers into a broth for a turkey soup. I really enjoy not wasting tons of food, so boiling the carcass to extract every last morsel feels like the responsible thing to do...

    Plus, with the weather getting colder, soup!

      The takeout turkey dinner (basically, half a breast and a leg quarter from a large bird) we got for this year's two-person Thanksgiving was badly oversalted for our tastes.

      I fixed it by cutting up the turkey meat into a creamy wild rice, root vegetable, and mushroom soup, which turned out quite nicely. Perfect for the first snowy days of the winter!
