this recipe is already obsolete, a work in progress. My wife went to bed over five hours ago and left by giving me a gentle hug from behind and a soft whisper in my ear: "Please stop making cookies."

I think I might take a day or two off work in the coming weeks and finally sit down and attempt to recreate this... Obsessed recipe. I tell myself I'm going to do it but laziness usually prevails.

I will always respect a Kenji recipe life story because it’s invariably a story in pursuit of culinary perfection rather than in pursuit of SEO!

The recent debate over brownie edges vs. centers - and the corresponding video in that link with an over-the-top solution for those who prefer centers - reminded me of this old classic, wherein a guy obsessively explores the state space of chocolate chip cookie baking. In case you haven't seen it already and are one of today's 10,000, enjoy!

I already brown the butter and cool it. I will have to try the ice cube trick but I do think I like getting a touch of texture from undissolved sugar
