What have you been eating, drinking, and cooking?

    I've been fiddling around with Mexican food quite a bit off and on. Home made chorizo is pretty much my breakfast staple.

    Anyway, I decided to dive a little deeper and see what other kinds of delicious things the Hispanic community makes. I found achiote and found I could make a paste out if it. A very delicious paste.

    So I marinaded pork in it over night and made some salsa. The next day I put the pork and the marinade I made from the paste and fresh squeezed OJ, and slow cooked it in a pot for a few hours. I also learned of red tortillas. Which is just achiote paste mixed in. I also mixed a bit in the water I cooked the toasted rice in.

    After all was finally said and done this was the result

      What kind of recipe are you using for your homemade chorizo? It's my favorite meat I get when I go out to a mexican joint. I'd love to try making it at home. Those tacos look delish, excellent job!

        I'm just using a straight seasoning recipe and then combining it with meats as I desire. There are many around google. I just recommend ancho chili powder, smoked cumin and smoked paprika instead...

    Shared this with a good friend who loves both mushrooms and coconut and needless to say they were a bit jealous lol. It has a very nice creamy and deep flavour.

      That looks super delicious. I love mushrooms, coconut, and risotto; it's the right season for foraged mushrooms; family doesn't like mushrooms and coconuts -..- Might make this for myself

    I tried and failed to make some eggplant — those darn purple veggies have always intimidated me, so I just yolo’d and managed to overcook them two ways. I’m going to try again soon; fish fragrant eggplant is one of my favourite dishes, and I’m determined to taste it with tempeh XD

    last night i did up the family meal spaghetti from The Bear, but with prawns. this recipe oss really great anyway, but for the parents i did them with a tiny bit of onion, three cloves of minced garlic, a splash of riesling, and sumac. i wasn’t expecting anything mind blowing, but sumac is and excellent add for a dish like this.

    for the salad i did a very simple dijon vinaigrette with cooled roasted brussels and capers, toasted walnuts, red lettuce, and some other stuff… and a little sumac in that dressing, too.

    i might be entering a little sumac kick. i’m not new to it, but i find myself wanting it on almost everything.
