Any other amateur bakers here with a favorite bread recipe?
Does anyone have any good recipes for bread?
My wife and I have been doing a lot of baking lately and I absolutely love making bread. It's easy (most of the work is sitting around waiting for it to rise/proof) and we've been making fresh sandwich bread to use in our lunches for the past few months.
I've found two recipes that I really like:
If you're making bread on the regular, try Japanese milk bread for sandwiches and toast. A portion of the starch is pregelatinized so it bakes up very light and staling-resistant.
Stella Parks has an enriched dough based on this "tangzhong" method in her book "BraveTart". Good stuff!
Speaking of which, Emmymadeinjapan (one of my favorite food related YouTubers) recently did a Hokkaido Milk Bread video that is worth checking out, IMO:

Milk bread has been on my list to try for a while. I've never had it before though so I've been waiting for a day when I have time to make that and a different batch if I mess up the milk bread.
I cannot recommend Chef John's breads for experimentation enough. He has a some great recipes out there. I am specifically fond of his No-Knead Ciabatta and his Sourdough is great if you have never made one before (part 1 and part 2).
Personally I do have a recipe similar to that country loaf one you posted (your second link) that I make weekly here at home, not sure where I originally got mine though.
Bernard Clayton's Bread book <--- highly recommended, you can buy a used edition form the 1980s or 1990s really cheap.
I have been on a huge bread making kick recently. I brought home some sourdough starter I obtained from a bakery from a recent trip to New Zealand, and have made a few loaves from it. I am extremely proud of my latest bake, a 70% hydration dough just using the Tartine recipe.
My next bread will probably be a milk bread, so I can make a Katsu Sando. I also want to make some killer chocolate chip cookies to bring into the office—it's been a few years since I've made a batch, and there seems to be some interesting recent techniques on the scene which would help me make the softer cookies I prefer.
