Relaxing Twitch Streams?
So I stumbled upon this streamer, KRX_ and he plays Cities Skylines in the evenings, when I have time after work to check it out. And it is relaxing to see someone build a city. He's playing Sims 4 right now, and it's still, it's like watching Bob Ross.
Definitively Jon Blow (naysayer88) and Casey Muratori (handmadehero).
I know, they mostly stream programming (Jon does some gaming every now and then). But I find listening to the clack of the keyboard and their usually soothing voice very relaxing. I usually have them on my background.
As for mainly gaming streams closest I know is Quill18 which usually plays Strategy games (he's streaming right now check it out) although I'm not sure he's super relaxing all the time.
Oh and check Sinatar if you enjoy retro games, he's streaming now as well.

Ahhh, I spent all of yesterday listening to KRX and quill18 cause of this thread. This is great! I was interested in game streaming early on, then the influx of pewdiepie-esque morning DJ fart noise soundboard streamers took over, and I gave it a miss.
I recommend the legendary Day9TV, he's a wholesome dude. But I don't know if it fits your definition of "chill".
One I think is very chill is Arumba. He used to play a ton of Factorio, now is mostly playing games like Europa Universalis. I don't like these types of games so I don't watch him anymore, but I watched a ton of his youtube stuff.
You may want to look at youtubers for specific games you like. Cities: Skylines certainly has its share of hardcore Lets Players (though I don't know them). Volx is one I like for Don't Starve specifically.
Kerbal Space Program I think you may enjoy watching if you're into the chill aspect of Cities Skylines and The Sims, but it's a lot more technical.

SimCopter1: Super chill stream with fantastic conversation. Probably the best chat I've seen on the internet ever. Games played are Rimworld, FTL, Into the Breach, City builders and some others.
MushHS: A small channel, but this man is a god at Rimworld, plays it on Insane difficulty and then adds more difficulty by randomizing everything and not creating kill boxes etc. Recently he's played Subnautica on hardcore.
kychtanach, she's a Russian girls that read aloud French novels, the really good ones. I don't know if there's an equivalent in English though.
I've been watching ImperialJedi, who also plays Cities, though he really only streams on the weekends. He also does things like Transport Fever, Euro Truck Simulator, Astroneer, and a neat bus driving sim that's very relaxing.
Not Twitch, but on Youtube there is PeteComplete. He does 100% playthroughs of various games, but my favorite is his Rimworld series that has been going for over a year now.
The most relaxing twitch stream I have ever seen is ObsidianAnt streaming Elite:Dangerous.
His voice is similar to a golf announcer, but narrating their adventures travelling through space. They also post everything on YT.
