I've honestly been feeling this way for a while now. All these resources and yet content updates for this game are so sparse. It really feels like they're not trying half the time. I want to give the benefit of the doubt, because I know that content is usually harder to make than it looks, but it's hard to adopt a charitable viewpoint when they've got so much cash to work with.
Makes me wonder if all the money & time is too busy being spent on ports and/or microtransactions for Bedrock edition :/
Maybe not sparse exactly. I think they feel sparse because a lot of the new updates are cosmetic or adventure based. Take creepers - one mob, but you can farm discs, use them for mining, farm them...

On the other end, you have pandas, which I simply ignore. They have more behaviors and breeding mechanics than creepers (ear position changes, yada yada), but they don't affect crafting, building, or fighting in any substantial way.
I think this is mostly dependent on the departure of Notch. Jeff (I can't remember who helms dev right now) has a thing against farms, and seems to think minecraft is a place to have generated adventures and only generated adventures. Adventure games tend to suffer from a linear increase in interest for each new addition. Add one more quest in a game and you have one more quests worth of cool stuff. Minecraft for a while had an exponential increase in interest with each new addition: creepers affect everything. So you don't just have one more clustercreeper of interest, you have creepers + combat, creepers+mining, creepers+building. There was way more payoff for a single addition.
Anyways, those are my thoughts. Despite Notch's views, I think they should thwack him with a plastic bat and make him work on minecraft again, because he had some sort of golden touch as far as gameplay.

Plus the dev teams really aren't that large. I'm sure they could hire a larger team if they wanted to, but for one reason or another they may prefer this style of development.

They also don't want to disrupt that. If they make changes that are too big, then they might ruin what made the game appeal to millions of customers. It would be a really bad thing for the Minecraft brand for it to be like WoW or TF2, where it's still popular, but a significant portion of evangelists have got the word out there that it's not as good as it used to be.

Maybe they consider stability more important than change? For a younger player, it’s all new and there is enough to keep busy for a long time.

There was one around the time I signed up. I never saw any updates on it, so I guessed it petered out.

Minetest also has 3D chunks, which are really cool. Minecraft is the better game, but Minetest's engine and modding offers more possibilities.
