Yeast + sugar = carbonation which continues until the alcohol levels rises to the point where the yeast is killed. I'm concerned that people who don't know much about fermented products may ending up with exploding bottles. 4 days of fermentation is not the end of the fermentation cycle, so putting in actively fermenting product into glass bottles looks to be a recipe for exploding bottles.

I am a homebrewer also having brewed beer for more than 6 years, i also highly agree counting days of fermentation for knowing the end of fermentation cycle may end up with bottle bombs. The only way bottle condition using the remaining fermentable extract is knowing the specific gravity and final gravity of the wort, in German brewing that's called Gruenschlauchen (green racking).
He specifically mentions they need to be bottles that are designed to withstand high pressures (not just decorative) and that the fermentation doesn't stop after refrigerating... but it's a fair...

I actually only stumbled upon this channel earlier today! :P I tried "real" ginger beer for the first time a few months ago and am kind of obsessed with it now, so I was on the hunt for home...
I actually only stumbled upon this channel earlier today! :P I tried "real" ginger beer for the first time a few months ago and am kind of obsessed with it now, so I was on the hunt for home recipes and this (as well as the previous "how to: ginger bug" one) was the best one I found. Plus, them turning out to be fellow Ontarians also made me feel compelled to submit it. ;)
p.s. That 1886 Coca-Cola recipe video is pretty neat too. Thanks for sharing it, and it looks like I am gonna have to dive in to their channel now as well.

The caveat was not sufficient. I speak with some authority having made wine for 10 years and having a working familiarity with fermentation.
