SpoilersI'm genuinely surprised at how well Claire nailed this one though, especially considering how hard I assumed it would be at first, and how much she has seemed to struggle lately.

The other thing is that she's not really a pastry chef. She went to culinary school but that's about it (unlike some other BA staff who have years of professional cheffing under their belts) - she's a recipe developer. I love Claire and she's obviously a great cook - but a real pastry chef wouldn't make any fuss about tempering chocolate, that's everyday stuff and anyone who has spent any amount of time working in the pastry section can do it with their eyes closed.

Did a mix of both, so search isn't effected too badly. I will slowly go through and edit all the previous ones and try to remember to do the same from now on when I post them, too. And now that...

And now that you mention it, yeah, it is a bit weird that all the other BA chefs are named directly in their videos, but not Claire.

Sometimes I watch an episode of Gourmet Makes and if Claire doesn't struggle too badly, I get the impression that I could follow her recipe at home. Like I think I could do the Oreos or the ice cream, my attempt would probably be serviceable. But the fact that she banged this one out does not give me any confidence that I could do it even a little bit. It still looked really challenging, it's just that Claire is so skilled she was able to knock it out of the park.
