If the anime is anything like the VN (and reviews seem to suggest this is the case), I can't recommend Steins;Gate enough. I'll warn you ahead of time that the first half-ish can be a real slog, but the payoff is absolutely worth it. It goes from 0 to 60 REAL quick, and once you hit that point, I promise you'll want to binge to the end.
Although I will say: If you're a stickler for art style, Clannad might rub you the wrong way. It was animated during the awkward transitional phase between 90's realistic style and '10s moe style....

I, personally cannot watch the series due to the art but if you don't care, I've heard it called the greatest romance anime/manga of all time
I really, really like Made in Abyss. Only one season of it is out and it's ongoing, but like, holy shit. Incredible story so far, and the backgrounds and music are incredible.

Trigun and FLCL. Apparently they did another season of FLCL but I never looked into it. It had been years since I watched original and when I heard the news of them bringing it back I didnt follow up.

See, I have no idea. Edit - I meant - See, I have no clue what I am talking about. I will check it out this week, and see what the new season is about. Probably a different story.

They aired the first episode of Alternative (the third season) back on April 1st, though the rest of it won't air until I believe September.

Give it the span of an episode to hook you, it's story, animation, framing and direction has been one of the standout ones for me in recent TV anime. It's also got a stellar OST.

I'm finding some of the stories unexpectedly very touching even when they center around side characters.

I have to preface all of these with one blanket statement. I found them all amazingly enticing because the show was truly a self-contained show. I have seen a lot of anime that requires some working knowledge of Japanese geography and culture in order to understand the nuances of it. All of these following shows do not require any of the such and can be enjoyed and analyzed throughly.
Death Note:
Super, super, super popular anime in the United States (Cartoon Network syndicated it for a while). The show follows an epic battle between two geniuses and explores the themes of religion and morality very well. The show is truly a gripping one so I would suggest just loading up the first episode and diving in. Episodes: 37~
Another:
Another is a horror anime that is not too gory and not too scary. It is definitely one to watch whenever you can, just make sure you get to it. Episodes: 12~
Monster:
This anime blew me away. I cannot remember how I found out about it because it's not available on Crunchyroll or easily on the web. I just came across it one day and now have all the episodes saved to a personal archive. This show is truly a crazy one, I'd call it Death Note on steroids. This show is rather long at 74 episodes.
Sorry if my episode count is off by the way, I am going off my memory.
One that I finished recently and love is Honey and Clover, following art students in college. It's quite melancholic though so maybe not good for recovering from Anohana.

This is an old one, but Hanasaku Iroha is a great slice of life show about finding happiness in everyday monotony, as well as a purpose in life. I started it a couple days after committing to a college which just made it all the more relevant to myself. The show's has its flaws (especially episode 3), but past that episode it's great.
I'm surprisingly into My Hero Academia.
Katanagatari. Sort of just solid overall with a visually appealing style.

It's only 24 episodes so I'm definitely down to take it on!
I recently watched Madoka Magica, and it was extremely good. I would recommend it to anyone.
Seconded, this show is a mindfuck in the best of ways.
If you want something warm and fuzzy watch Usagi Drop.
If you liked Anohana Clannad is the next up.
Yes! My friend just recommended that to me. It's on the list!

SFX: the rumble of scientific confusion
MiA will fill the void and then replace it with one twice as wide, haha. But man, such a good watch.
This is an accurate description.
Is there anything that fills a giant hole better than world-sized giant hole where best dad lives?
Trigun and FLCL. Apparently they did another season of FLCL but I never looked into it. It had been years since I watched original and when I heard the news of them bringing it back I didnt follow up.
Well they are doing another season of FLCL. I think two of the episodes are out now?
See, I have no idea.

And basically anything from Studio Bones.
I would add to that:
Watched Redline then bought the Blue Ray. That movie is pure adrenaline. I love it!
I kinda like Mushishi.

Steins;gate is an excellent sci-fi thriller and the sequel (Steins;gate 0, airing this season) is just as good so far.

Thank you for the recommendations! I'm definitely going to have to check out Another
If you want something funny and on the fluffier side, the Working!! anime is great.
One that I finished recently and love is Honey and Clover, following art students in college. It's quite melancholic though so maybe not good for recovering from Anohana.
I'm working my way through Gintama right now, love that show to bits and it's got a lot of laughs if you need something light
