Made with vanilla sponge, meringue, almonds, custard and whipped cream – Norwegians love this cake so much they nicknamed it "the world's best cake"

I would add it to that list but one look at the photo of this thing and I know I can't/won't be able to make this.

It's just a basic white cake batter with uncooked meringue smeared on top of it before baking. And once that bakes you just cut the cake in half, then put whipped cream folded into custard onto one half of the cake, then put the other half of the cake on top of that.

You could probably even make a pretty decent version of it using a boxed cake mix, custard powder or canned custard, and miracle whip or aerosol whip cream. About the only thing you would actually have to do from scratch is whip some egg-whites and sugar into stiff peaks for the meringue. But even for that you could cheat by buying boxed egg-whites so you don't need to separate them yourself, or waste any yolks (since you're not making the custard from scratch using them).

When school starts again so my kids are out of the house more I could probably take my time and swing it one day when I'm off work.

This made me chuckle. I also have a box of recipes that I'll get around to finally making when I'm dead and finally have enough free time to get whimsical in the kitchen.

There are also variations of this with berries, apples, etc. They're all freaking delicious.
