I sent an email to the Apollo developer gently probing interest in adapting Apollo to be Reddit-like agnostic through changing the proxy server to return {type: āNotImplementedā} for capabilities that donāt exist on other platforms and handling it in the client accordingly.

As a matter of trust, I could not bring myself to throw all of my (necessarily) unencrypted credentials and traffic and data through somebody's webapp: beside the trust problem, there's also the issue of security - that's a lot of traffic flowing through one person's Vercel app.
Instead, normalizing the different sites to an "everything" API would be much better handled locally in ex. Java.

If Infinity for Everything allows me to interact with my primary online/social networks it'll be an easy migration over.
