Authentic ramen. Not the prepackaged stuff that's mostly salt with some noodles and dried vegetables added for garnish; I mean the stuff you get at a proper sit-down restaurant. Specifically, I could live on variations of tonkotsu ramen forever. Ramen is a soup, and like jahnu said, it's so variable. You can add so much to it (and indeed, many soup / stew dishes got their origins as "just take what's in the pantry and toss it in the pot") and customize it in so many ways that I don't think I'd get bored.
Ditto, and Pho is similar for me, too. I could happily eat either one every day for lunch, and it probably wouldn't even be too unhealthy doing that either. :P

If I hadn't tried it myself, I wouldn't believe a sandwich with beans on it would be any good, but the tellera makes it happen.

For the last four and a bit years, I've been eating (well, mainly drinking) soylents, or meal replacements for my lunches. I'm circulating multiple brands and it works really well for me. Quick, easy and nutritional. I could imagine myself doing this for the rest of my life.
They aren't the most memorable lunches of course, but lunches rarely were for me anyway. And I wouldn't replace all of my food intake with soylents, as I love cooking and good food.
Salad! It's a versatile meal where I can change up what vegetables I get every time. Not to mention it's light enough so I don't feel bogged down for the rest of the day

I'm not sure if this counts, but I almost always prepare a meal that follows the same structure when left alone to buy and make food for lunch. It looks like this:
Sandwich. I usually alternate between PB&J and some kind of lunch meat and cheese, generally on wheat bread.
Fruit. Some kind of fruit, usually whole now but often apple sauce or a little cup of canned fruit when I was younger.
Yogurt. Usually either vanilla or strawberry Greek yogurt. I want to find a company that makes a whole range of flavors with whole milk, but most seem to only do plain and maybe one other flavor.
Dessert. This is often something portable in case I have to pack up my lunch, but sometimes it's something my SO has baked.
Assorted nuts & dried berries, but it's not hypothetical; I've been doing that since I had teeth. That plus a teaspoon of oliveoil and honey each, and lettuce- or spinachleaves. Still tasty and...

I once felt the same, until I actually did it. Tonkotsu ramen is a strong flavor, and any strong flavor gets fatiguing day after day.

Japanese curry pork chop! I maintain that that, served with nice, fluffy shortgrain rice, is what makes my day, regardless of what's put in it.
