University exams have begun so I meal prepped some pulled pork in my slow cooker. I am still tweaking the recipe, this time I tried using broth for the liquid instead of water and I think it was an improvement? I mostly have been using it in sandwiches.
I also was able to get some grapes on sale, I am not usually one to buy grapes but it was nice as a change of pace in terms of my daily fruit consumption. They also seem to be surprisingly fresh, but that might just be my lack of knowledge of growing seasons.
I do this too but have mixed feelings about the results. I like a good pulled pork sandwich for taste, but in practice I find putting it on a bun kind of a mushy mess.
Does anybody have anything they do with it otherwise? I have put it on nachos as an experiment, but the if the pork is headed toward barbecue (rather than smoke) flavor, I find it weird.
Try swapping the BBQ sauce and bun for salsa and tortillas! Then you're making carnitas for tacos. Add some shredded cabbage for fiber and crunch.
I will give it a try. Thanks!
I tried a ghost pepper ketchup a few days ago. It was made by the owner of the restaurant who does his own spice mixes and is starting to experiment with growing his own peppers as well.
I think I'm running into the "getting older". I'll be 30 soon and whenever I eat real spicey food now I have absolutely terrible bathroom breaks the next day and a minor stomachache. This is relatively new since I didn't have this even a year ago. Kind of a bummer since I moved to a country with plenty of access to spicey Asian cuisines.
If you're not lactose intolerant, what helps is eating some yogurt after eating some spicy food. That helped a lot when I tried carolina reaper whole. I felt a burn in my insides, but yogurt help to neutralized the burn. Still, try on your own risk type of deal.
Thanks for the tip! My wife has asked me to stop eating such spicey foods so I'll keep this in my back pocket for the next time I get the urge.
I got a can of organic jackfruit in barbecue sauce… from the now-closing 99¢ Only store (where of course it was marked as $3.99).
I got extremely sick from it later that day. 😮💨
Sorry to hear you got sick! What did it taste like? Was it meant to be sort of a vegan pulled pork?
Basically, yes. It’s not really much like it though. It’s not hard like pork is, nor is it anywhere as fatty.
I've been trying to make half sheet maki, but my eye for amounts is off. Still putting too much into most rolls. Made some oatmeal raisin cookies this weekend. At least they turned out well.
I've had the same issue portioning maki rolls. I find it farrrr easier to make the style with rice on the outside (place the rolling mat inside a ziplock bag to help control stickiness).
I grabbed a Ninja Creami last week because of tax refunds lol. Anyone do anything interesting with it? I've been making protein ice cream and enjoying it, some 1% milk, protein powder, and some greek yogurt and we freeze it and call it a day!
I found some salmon fillets that were 60% off so I made this salmon superfood salad for dinner tonight. I've made it a couple of times before and the dressing is absolutely phenomenal. It's good with white miso but even better with brown.
Made a sundried tomato loaf for my grandparents on Sunday which they inhaled, so that must have been decent. There was only a quarter of it left when I got done visiting them.
I've also had to go into the office this week for a quarterly event, which I always bake some goodies for. This time was a huge quadruple batch of banana everything cookies, a 4 layer lemon courgette cake (practice for my wedding later this year) and a fruited tea loaf. It's a three day event but most of it's already gone!
My wife has been craving seafood lately, and today I happened to be a few hours out of town near an amazing fishmonger that we used to live by. Bought a selection of her favorites as a surprise... oysters, scallops, uni, ikura, and choya umeshu to drink. Served with some stir fried nagaimo in bean curd sauce and yau choy sum.
