        I feel like I’m the only one who finds brown bananas to be gross. When they get to that stage they lose out on their sweetness. The optimal time to eat a banana is a few days after it loses its woody texture for me.

          Hot take, Bananas are good at all stages, just different. I love a firm, astringent green banana, I love a ripe yellow banana, I sweet spotty banana, and I love a boozy brown one. All good for different things: green/yellow are great in cereal, spotty bananas are champs of the tortilla, boozy browns kill it on fosters and breads.

            I googled "banana tortilla", and found some recipes that just look like banana pancakes without the baking powder. I also found that people just use tortilla instead of bread and make peanut butter banana sandwiches. Are either of those what you're suggesting here?

              Hahaha, I meant using a banana/peanut butter with tortilla instead of a bread - special shout out to La Tortilla Factory for their fat, chewy tortillas that work an absolute treat! I like banana...

              I like banana pancakes too, but the tortilla wrap is a very easy, balanced, good to-go option for my everyday.

            Banana pancakes are another simple method to get rid of overripe bananas. It's just bananas and eggs for a plain bapancake and it's already great.

            I do the same, more or less. When bananas get too old they get peeled and frozen for use in recipes.

          There's a specific delicious consistency and flavor to the entirely yellow banana with zero spots. Green won't do. Spots are overripe. Chilled blemish free yellow is the way to go.

    Not a word there about how it tastes. Speaking of asexual reproduction in fruit, I am not impressed with seedless watermelons. I’ve had a heck of a time getting any to grow in my yard, which baffles me. When I was a kid we had them sprouting up all over the areas we’d spit out seeds. I live thousands of miles away now, but still. The summers aren’t that different.

    For anyone interested in a recipe that uses underripe bananas, I really like this Banana pudding recipe, by Magnolia Bakery. I think it’s relatively simple as well and serves well at a potluck.

    The banana will still ripen, it just won't turn brown. That seems fine for banana bread.

    The company worked out how to disable a gene responsible for the production of an enzyme called polyphenol oxidase, which causes browning.
