The idea of lab-grown meat very much appeals to me, both for the idea that one day it could be more environmentally friendly, and because it removes a lot of lingering ethical concerns that I have around eating meat. It occurred to me that I hadn’t heard much about lab-grown meat lately, so a quick Google search brought me to this timely article.

I quite enjoyed this piece. Aside from being informative, I found the subjective writing style entertaining and well executed; it’s not quite gonzo journalism, but it’s not not that, either. It reminded me a fair bit of the “best free restaurant bread in America” piece that was shared here a little while back, although I think I preferred this one.

One thing that surprised me was the mental barrier that the author apparently had with the artificial aspect of the food. Having never tried it, I imagine that lab-grown meat would appeal to me. I have a mild discomfort with natural meat when I think about its origin fit too long, and would hope that lab-grown meat would alleviate that; I would have guessed from the article’s beginning that the author would feel the same. But maybe it’s something that has to be experienced in person. Has anyone here ever tried lab-grown meat? If so, how was it?
