What are y'all having for dinner tonight?
I'm either going to make a chicken stir fry or chicken pasta. I'm making a big pot of pinto beans right now but that's really just to have around for the next few days.

I am having a shitload of dental work done over the next couple of weeks so soft things, soups and curries for me for at least a month. Haha
Oh man, I wish I had an excuse to just eat curry for a month!

Because if I ate nothing but curry, my wife would suffer for it lol.
That sounds killer. Hopefully the dental stuff works out. I had a couple of implants put in and they're great, although the process was long and painful at points.
Thanks so much! I've got a long month filled with like 5-6 procedures, but afterwards I will be back to being healthy. So wahoo for mashed potatoes and curry for the next 4 weeks. LOL
One of my weeknight takes-less-than-ten-minutes-to-make meals: (vegetarian) tacos.
I do something similar, except burritos.
Chop an onion, fry in clarified butter. Dump in a drained can of black beans, maybe some frozen corn. Then I'll add a little beef bullion (so, mostly vegetarian) and a packet of Goya Sazon dissolved in a little water. Once the liquid is boiled off, I just spoon the filling onto some tortilla with smashed avocado, wrap it up, brown it a little, and serve with a little sour cream and red salsa. Sometimes I'll make some rice to add in there as well.
Very cheap, filling, tasty, and quick to make.
How do you cook the veggies?
I use crumbled tofu for the filling! If you freeze the tofu first it has the consistency of, say, scrambled eggs - so it works nicely in a taco shell. I just use one of those Old El Paso spice mixes and top with pico de gallo and a little sour cream. It's not fancy, but it's filling, healthy(ish), and quick.
Kelbi beef with cauliflower rice. My diet is keto so I can't have normal rice but cauliflower rice is actually pretty good.
I've been interested in trying cauliflower mashed 'potatoes' for a while but I don't have a ricer.
I don't like cauliflower mash (it's a texture thing) but my wife loves it. They sell cauliflower rice in the frozen veggie section at most grocery stores though.
I'm a fan of cauliflower mash. Think the texture of mashed potatoes but the taste of... well, broccoli and cauliflower, and there ya go.
Fair warning: you will be disappointed if you are expecting it to taste like mashed potatoes. Cauliflower mash has a different texture and tastes sweeter and less earthy than potato mash.

I just finished my macaroni I actually made some fancy chicken with brown sugar and cayenne it was amazing
I am a single dad with a 4 year old, mac 'n cheese with hot dogs and peas is a weekly meal for us!

Stir fry vegetables with rice. Also doing some nice honey garlic sausages on the grill to put over top.
I always cook for five people and my oldest daughter is vegetari-esque so we try to give some options.

Since I just received notification that I have earned enough points for a free Domino's pizza... I'm leaning towards a pizza.
Otherwise it's Costco frozen salmon (thawed) baked in the oven with some random seasoning - currently really liking real maple syrup and Penzey's BBQ3000 - and some veggies done in the oven or skillet - likely one of the frozen medleys from Costco. Fiancé and I are simple folks who like cheap and healthy. Except for those pizzas from Domino's...
Have you tried the trader joe's chili lime seasoning? It rocks on frozen (grilled) fish with a bit of olive oil.
Because it's raining and not suitable to grill out, it's pizza night.

In the summer we try to, since the winters are cold and depressing.
I had a salad made with puy lentils, smoked mackerel, halloumi, shallots, courgette, cherry tomatoes and a tonne of fresh basil. And if that all sounds dreadfully healthy, my wife is pregnant so I have to make healthy food at the moment. Had a double chocolate brownie for dessert though.
My wife and I are making quinoa caprese salad. Pretty quick to make, just quinoa + mozzarella + tomato + cucumber + dressing, and we try to make it healthy. Good summer dish!

I am debating either making a pizza or just getting something quick from a convenience store.
I would be making the pizza sauce from scratch, which means that it would be delicious, but at the same time I really don't want to have to make it.
$1 canned beef stew and $0.25 loafs of daily bolillo bread. Its actually not that bad, though I do miss vegetables.
That actually sounds way better than it has any right to. I love those bolillos. They're great for garlic bread, too.
I'm making meatloaf! I haven't made it in a few years as it usually leads to a lot of leftovers.

We make them like fajitas:
sautéd:
1 onion
1 bell pepper
shredded cheddar cheese
refried beans
pico de gallo:
5 tomatoes
1 onion
1-2 seranos
3 Tbsp finely chopped cilantro (leaves only) (Three fist sized heaps of leaves unchopped)
4 garlic cloves
2-3 limes
guacamole:
2 avocados
half a cup/to taste pico de gallo
Pros: It's vegetarian and can very easily be made vegan. Also it's mostly vegetables so it's pretty good for you.
Cons: It can make you hella gassy. Also, it's super easy to eat way to much of it, especially if there are tortilla chips lying around.
