The beginning :P
But if you want specific song recommendations:
Out of the City is a real unique southern-funk song that would set the stage for his follow-up album Southern Nights
Soul Sister is one of my favorite all-time songs, just a lovely little ditty about a pretty girl
On Your Way Down is one of his more well known songs from this era which was covered by about a million groups, famously so by Little Feat on Dixie Chicken
The real interesting thing about Toussaint is how hard it is to get a grasp of his discography. He wrote so MANY things for other people and produced about a million albums! I've spent literal weeks digging into his catalog and I still find songs he wrote that I had no idea were his.
A couple of great covers / performances / productions of his:
Robert Palmer -- Sailin' Shoes > Julia > Sneakin' Sally Thru the Alley. Toussaint produced, backed by the Meters & Lowell George, this album is top-notch all the way round.
Ernie K-Doe -- Whoever's Thrilling You is Killing Me. Dynamite soul from one of Toussaint's best performers, Ernie K-Doe. Toussaint's voice is unmistakable (to me) in the background vocals
Earl King -- Some People. Deadly horn-funk, written & produced by AT.
Oh, did I mention that the Meters were his backing band for years? Might as well throw them in here, with the track Jungle Man, produced by AT
Great Toussaint overview! I would add the hits he wrote for Lee Dorsey (Holy Cow, Working In A Coal Mine, Who's Gonna Help A Brother Get Further, Night People, Get Out Of My Life Woman), and Benny...
Great Toussaint overview! I would add the hits he wrote for Lee Dorsey (Holy Cow, Working In A Coal Mine, Who's Gonna Help A Brother Get Further, Night People, Get Out Of My Life Woman), and Benny Spellman (Lipstick Traces, Fortune Teller). And his production work for Nightbirds by LaBelle. Mighty fine stuff.
And there's also Toussaint's late career focus on his magical piano playing, featured on his jazz album Bright Mississippi. (Incidentally, I have 3 CDs of solo Toussaint recorded while soundchecking on the piano before he went live on the air at the radio station where I work. Each time he came in - three different sessions, several years apart - he sat down and started warming up with little bits of Bach, Professor Longhair, jazz standards and his own tunes. It was a very special little command performance for those of us lucky enough to be in the room!)
Lee Dorsey deserves a mention for sure; my favorite track of his at the moment is probably Lottie Mo -- not one of the ones that really defined AT's career, but the mix of AT channeling Professor...
Lee Dorsey deserves a mention for sure; my favorite track of his at the moment is probably Lottie Mo -- not one of the ones that really defined AT's career, but the mix of AT channeling Professor Longhair on Piano and the cool funk of the Meters is hard to beat! Little Baby is another great track of the same disc.
There's also a great compilation album of AT's early era that includes the Benny Spellman stuff along with some tracks with Fats / Chris Kenner / and some of his early "bands" (e.g., The Rubiyats) that's worth a spin.
Hadn't heard of the Nightbirds album (see! always more to find!).
Any chance I could get a rip of those soundchecks???
Illmatic. It always gets me hungry to get out and make things happen / start my day. If I rap through the first three tracks flawlessly I feel like I can do almost anything lol.

I'll define "go to" album as something I have come back to repeatedly over many years. By those standards, the list includes:
Love Power Peace by James Brown - one of the best live albums ever, with James Brown's best band ever, the original JBs.
Mothership Connection by Parliament - P Funk. Uncut funk. The bomb.
Mingus Mingus Mingus Mingus Mingus, by Charles Mingus - not Mingus's most acclaimed album, but it was the first one I heard and it contains everything I love about his music.
Folk Singer by Muddy Waters - Muddy returns to the delta blues style of his younger days for a haunting, deeply soulful album. With a young Buddy Guy on second guitar.
Thrust by Herbie Hancock - amazing jazz/funk album filled with awesome '70s synth textures and a telepathic connection between the bassist and drummer.
Eli & the 13th Confession by Laura Nyro - jazz and soul influenced rock songs from the late '60s, full of twists and turns. Several of the songs became hits for other artists.
Among more recent albums, one that keeps me coming back is Beyond Now by Donny McCaslin. Amazing modern jazz from the same gang of musicians who played on David Bowie's last album.
The Avalanches - Since I Left You, it's my favorite album and even after a long time of listening, I can't help but get lost in the sampling over and over again.

You've probably already heard this though, so here are some other recommendations:
God First by Mr Jukes. This was my favourite album from 2017, it's the project from the lead singer of Bombay Bicycle Club. Start with the song "Grant Green", which features Charles Bradley.
Discovery by Daft Punk. Pretty much THE electronic album.
Never Take Friendship Personal by Anberlin. A rock album from my teens, still holds up IMO. Start with "The Feel Good Drag"
I Forget Where We Were by Ben Howard. His far less commercially successful second album. Much darker than Every Kingdom, but still just as good. His new album Noonday Dream comes out in June.
Awake by Tycho. Great slower electronic music for working or relaxing.
Blood by Lianne La Haves. Jazz/Soul singer-songwriter. Start with "Green & Gold".
Oh boy, I just listened to this for the first time two days ago! What an excellent album, I didn't realize how many of these songs I already knew and enjoyed. I really should have checked this one...

Captures a moment of time so perfectly for me. Probably the best examples of Bone Thugs harmony and rythmn heavy hip-hop. For anyone who is unfamiliar with Bone Thugs, I challenge you to look up the lyrics to some of their songs and try and keep up with them. Their specific style is something really unique for the time, and even to this day really. It's a classic through and through.

I am really starting to think that I will never hear "Even Flow" too many times in my life.
Several songs in that album the way Eddie Vedder strains his voice really pulls me into his music. The only other singer that pulls me like that is early Scott Stapp and even him to a lesser extent.

Have you listened to "puscifer - money shot" album ? If you like Maynard stuff you probably heard it already. I think it's a great album, I'm not a big fan of electronic music but its really well mixed with rock in here. The first half of the album it is a bit "too electronic" for my taste but it gets more rockier after the first couple of songs and it ends with a nice sort of gloomy tune called autumn. Like you said, quality stuff.

Basically all of those five are quite different so if you start to listen to one and are immediately not a fan, just give the next one a try. Honourable mentions go to Dark Side of the Moon, OK Computer, and Sgt Pepper's Lonely Hearts Club Band, but I tried to include things that are at least a little off the beaten track.

I should preface this by saying I'm not much of a rap or hip hop person. Usually it's a Radiohead or Tool or Rage Against the Machine album that I would also go back to, though Tame Impala were ruling for a while. I'm really more of a rock person but I find I'm into music either for lyrics or soundscapes.
Something about this album jumped out at me in a way no other rap album has before. Firstly, extremely jazzy. I find it hard to resist the style of jazz like Thelonious Monk or in movies like Whiplash, and this album is full of great jazz. Secondly, the introductory song is about being fiscally responsible and being wary of taxes when you make it big because getting big and then "passing out M16s in the hood" is a stupid idea. That combination really got my attention.
What follows is an album full of great music, and very clever multi-layered lyrics and messages about struggling with a sudden rise in popularity and fame and all the expectations placed on you as a black man from Compton in America, but trying to keep the core values that made you who you are in the first place.
I find it hard to fault this album for anything, and going along with Kendrick's super bouncy and variable flows is a lot of fun. The hip hop community seems to only ever fault this album for not having enough "bangers" and being too dense for casual grooving to, but I think that's what appeals to me about it. As much as some of the songs sound like ones you can turn our brain off to, you can't really do that within the context inside the album. I always loved Radiohead, Tool, and Rage for sending my thoughts on adventures while I listened to them and this album does that for me just as well, but with a completely different sound than those.
Definitely not an exhaustive list but the past few years these have been the closest I got to "go-to" albums. The Replacements - Tim Frank Ocean - Blonde The Stooges - Funhouse Billy Joel - An...

I couldn't decide on just one. As you can tell I'm really into rock from the 70s and 80s. I'll even go back another decade and listen to the Everly Brothers or Roy Orbison.

Go through Jack Staubers albums if you want something jolly and surreal at the same time. Viator is my favourite so far, but it's too close to call. "getting my mom on" and "buttercup" might show some of the more up parts, and there's a bunch of more solemn things peppered through the album.
I've been having a blast with this style/theme/aesthetic though. It strikes the perfect match of having lyrics that aren't just expositions for the purposes of the song, and having lyrics that are more instruments than story.
My favourite album is probably "Pure Cult: The Singles 1984–1995" by The Cult. They've done a few compilation albums, but I think this one takes the cake. If you like hard rock but have never...

Allen Toussaint's masterpiece, Life, Love and Faith. A delicious intro to NOLA funk / soul from one of the greatest song writers of all time

A couple of great covers / performances / productions of his:
I could (and have) gone on for days -- the last radio show I did focusing on Toussaint (AT music starts ~ 10min) was over a year ago, high time to dive back in

That was an amazing album. I love Frontier Psychiatrist!
I'm glad you like it too! Frontier Psychiatrist is great, but some of my personal favorites are ETOH, Live at Dominoes, and Electricity.

Anything with Maynard involved in it is usually a pretty safe bet. That dude only puts out quality, incredibly well produced albums.
Don't forget about the rest of Tool, all of whom are apparently the same way. It's a band comprised of perfectionists.

Hell, the music is great even if you're not a huge Tolkien geek imo.
Cold war kids Robbers and Cowards
Since it's "go to" and not masterpiece (for which there are many awesome ones listed), I love to listen to anything by The Front Bottoms. They're an indie rock band with songs that are easy to learn and the best to shout-sing. I love to put them on in traffic and channel my anger at that idiot who can't merge into the songs!
I actually have a playlist of full albums I love to listen through from start to finish. These are are some of my favourites from it:
Time - Electric Light Orchestra
Every Valley - Public Service Broadcasting
Vitalogy - Pearl Jam
I Robot - The Alan Parsons Project
The Honeymoon is Over - The Cruel Sea
Déjà Vu - Crosby, Stills, Nash & Young
Basically all of those five are quite different so if you start to listen to one and are immediately not a fan, just give the next one a try. Honourable mentions go to Dark Side of the Moon, OK Computer, and Sgt Pepper's Lonely Hearts Club Band, but I tried to include things that are at least a little off the beaten track.
I have a few discoveries to share:
Metal style (Uplifting metal, Bulgarian): Bakos Attila http://www.attilabakos.com/ (album: Aranyhajnal) (This dude is amazing, his music is a one man show, from what I understand)
Downtempo (sort-of-psychedelic soft-electronica): Kick Bong (album: The Secret Garden)
Synthwave (Synthwave): Gunship (album: Gunship) (Tech Noir is a fav)
young thug - slime season 3 or barter 6
ulcerate - the destroyers of all
Big L - the big picture
tim hecker - ravedeath 1972
falls - you have been keeping
Easily my two fav thugger projects too. How do you feel about his newer shit? Seems like he's been going a bit downhill to me.
I've been loving super slimey , beautiful thugger girls, and jeffery but the latter 2 definitely have a different sound; but I'm a thugger stan through and through
The album I've been coming back the most to in recent years has been To Pimp A Butterfly by Kendrick Lamar.
The Replacements - Tim
Frank Ocean - Blonde
The Stooges - Funhouse
Billy Joel - An Innocent Man
Eagles - One of These Nights
Fleetwood Mac - Rumours
Billy Joel - The Stranger
Michael Jackson - Thriller
REO Speedwagon - Hi Infidelity
The Cars - Shake it Up
I couldn't decide on just one. As you can tell I'm really into rock from the 70s and 80s. I'll even go back another decade and listen to the Everly Brothers or Roy Orbison.
xx by The xx
If you like hard rock but have never listened to The Cult, I'd say this is the go-to album.
I can't find a link to that album specifically, but here's a link to a playlist of great songs by them.
I'm not usually into the genre, but for some reason I can't get enough of "Beneath the Skin" by Of Monsters and Men.
I'm also a big fan of comedy bands. Here's the first album from one of my favourites, Ninja Sex Party.
For me it's either
Mansion - NF,
The Click - AJR,
or
Translations Through Speakers - Jon Bellion
It might be super mainstream, but I love these albums and artists to death. I don't listen to much rap, although NF releases a lot of songs I can really connect to.
Pink Floyd: Live at Pompeii
I can't explain what's so special about this album, but no matter where or what or how, this is always good.
