All the beets please. Roasted and pickled and red and yellow. Yes.
When I was a kid I strongly felt that pickled beets were some kind of trap. Their sole purpose was to trick kids that wanted those cinnamon apple things into eating vegetables. I had proof, I'd never seen an adult eat a pickled beet.
Now I just wish I knew what the apple things that look exactly like pickled beets were so I could make some. I loved those things.
I mostly like beets raw.

I'm eastern European and beets are a part of my blood. My favorite thing to do with beets, aside from eating them like candy once they're roasted, is Ukrainian beet salad.
Roasted beets
roasted potatoes
roasted carrots
peas
raw onion
sauekraut
pickles
sunflower oil
salt
use proportions with the heart of your ancestors and mix. Best left for a few hours to meld before eating.

I like it, but especially: beetroot juice before a workout - it reduces the amount of oxygen required for aerobic workouts. I have set every one of my 5K personal records with beetroot juice

If you're having a standalone salad grated beetroot can fit in well (similarly to grated carrot) or even small cubes of baked beetroot if you're doing the sort of salad which incorporates other baked veggies like pumpkin or kumara.
If you're making something like a sandwich, burger, or wrap which includes salad then pickled beetroot (the type you get in cans) goes well with that.
I sometimes ate a Argentine beetroot salad, I use beetroot, carrot, tomato, peas, potato, and egg as the ingredients for the Salad, i also ate some variants of the salad that exclude some ingredients
My favourite beetroot salad: bake them with their skins on, peel them, cut them into cubes. Mix them with salty cheese (ex. Feta), some walnuts and a dash of vinegar. The result is a nice combination of textures & tastes.
In my school, a common entree that I liked a lot was diced baked beetroot with a tasty light vinaigrette that I've never been able to find again. I like beetroot a lot.
I've grown up eating beets and didn't know how to react when we gave our Korean landlords some that we grew and they were like "what is this and how do we prepare it?"
If beets weren't already normalized for me, I'd probably be terrified.
I love beets. Golden beets don't stain or turn your food pink, if that is a concern.
I roast beets with other root vegetables to make soup, and I put beets in my tomato sauce (diced small) --it especially adds depth to spinach lasagne.
My neighbors mom makes amazing spiced pickled beets, which I love on salads, especially paired with goat cheese.
If you grow your own, beet tops are a nice alternative to baby spinach or chard in the spring.
I've tried beet. I'm not a fan. There's something that just tastes wrong to me in a way I cannot put my finger on. It's both sweet and savory in a way that I find unappealing. It's kind of like eating something you when it's cold, but when it's warm, except you can't get beet cold enough to get the flavor I want it to be.
The most common time I've seen beet is on salad, and unfortunately I've only had one with beet that I actually liked.
I really like beetroots but beware the juice, it will stain bad!
And surprising when the liquid is done being processed by your body :D
Beetroots are healthy, also their juice is healthy, I like a lot beetroot
because it contains Antioxidants and other healthy things
Love beets. I have a garden bed of them in need of harvesting and half will get pickled while the other half are kept in root cellar storage for roasting or boiling later. My favorites are simple roasted beets or pickled.
I too have a garden bed full of beets that need harvesting! What do you do with your pickled beets? And how do you store your beets long term? Ive only ever done in fridge, sealed container, leaving the dirt on but trim the leaves. I've left mine in the ground since I don't have the space to store them or the appetite to eat them all at once
I had beetroot ketchup the other day from a healthy eating place. I don't know quite how it was made, but it was delicious as a condiment. I'd easily have it over regular ketchup, but then, I don't love regular ketchup all that much.
Eastern European here, beets are great until you get kidney stones. Then you'll never eat them again. But shredded friend beets with pork chops are delicious.
