      I have a reputation for being an atrocious cook. No one wants me to cook for them (I've had outright refusals), and my 'meals' have been the butt of jokes. Having had so many kitchen disasters I fear trying anything new or complicated. I try my best to follow a recipe, but things often start to derail and I don't know what I've done wrong. I have zero intuition then I can get into a spiral where things turn from bad to inedible.

      Much I can attribute to how I grew up around food. The parent with the cooking duties didn't like to cook and didn't get to grips with it, but I didn't know any better. For most of my life, the dinner meal fit the same template: over-cooked (but not charred or burnt) plain meat, a carbohydrate (usually a root vegetable plain or mashed, but without any other ingredients), and over-boiled vegetables (soggy and tasteless). Table salt, pepper, and commercial tomato sauce were available for seasoning on plate - nothing was ever seasoned prior to being plated. We had no gravy, mayo/aoli, marinades, chutneys, dressings or the like, except for the Christmas day meal. Fresh herbs and whole spices did not exist in this reality, but some packet ground herbs and spices were kept and only to be used for the Christmas Day meal.

      Needless to say, leaving home has been a bit of a revelation for me. I love flavorful food, and eating herbs and spices every day, but I struggle with cooking and don't have much confidence. I would like to learn how to cook, with an emphasis on health and nutrition. I know plenty about those topics, the problem is with the execution! I need to go back to the basics - learn techniques, experiment and fail, but still somehow improve over time. My primary motivation is to do this for myself, but it would be nice to one day be able to offer to cook for someone! I'm not very ambitious, I'd be happy with just doing a few things very competently and am patient and ready to work on this for the next few years.

      I've hunted around on this site and found a discussion about the 'Salt, Fat, Acid, Heat' book/series, which I'm currently reading/watching and have learned a lot so far. I also found an old thread about culinary theory, but I think that's a bit over my head! (https://tild.es/6pc).

      So, Tildes, has anyone taught themselves successfully as an adult? Any advice on how to start or any resources you can point me in the direction of? Ideally, I'd like to learn about the 'why' as well as the 'how', because I am just so clueless! Also, are there any food channels/blogs etc. that you follow that have an emphasis on healthy and fresh food? Very open to all cuisines. Thanks all!

    43. Unpopular opinion: Brands will appear far more trustworthy if they stop all this "narrative feeding"

      In this post, I'm going to say something which might seem controversial, politically incorrect or even downright harsh to some of you. Feel free to let me know and express your strong disagreement if that's the case. Everyone's world view is different and I'm ever ready to adjust my own in light of new found facts and evidences.

      What I'm observing these days is that many big tech companies and large corporations are pushing lot's of content on Linkedin, Twitter, etc. which conveys the idea that these companies are standing up for the rights of supposedly oppressed section of the masses (females, minorities, etc.). 8 out of 10 postings from them are typically about these, a group picture of women employees, retweets or likes of those who have posted on new joining and promotions, etc.

      With all due respect, the problem here isn't with the virtues of women empowerment, etc., needless to say these are good things to be celebrated in a society. But the problem is with their approach. When 8 out of 10 posts are only on these topics, the impression or narrative being pushed becomes that the world at large is very cruel and gruesome whereas these large capitalists are the ones who are implementing just rules and ethics on that world. Do you think this narrative or story they're selling is based on any factual reality?

      I've seen and experienced a fair part of that "world at large" myself and while there are indeed many problems with it and it's far from perfect, it's a bit rich of these capitalists to make that kind of narrative signaling when, in fact, they're the ones who are partly responsible for keeping it ever poor and oppressed. These companies have the highest privileges of the world and they profit out of a crony system that thrives and benefits from the gates which keep the competition away.

      Now, I'm not one of those "ancap" dudes who blatantly cancels capitalism entirely. Oh no, we all do need capitalism, not only because it's a system that pays your salaries and bills but also because the alternative is much worse and we have seen what it did in Russia and Korea and China. I just wish capitalism was more inclusive and of the Adam Smithian Laissez Faire and free competition kind and less of the big tech and surveillance capitalism kind.

      This constant narrative pushing by the corporates, in effect, keeps people distracted from this truly bad aspect of capitalism. The masses are gullible, they can't see it, but the people sitting at top positions in these companies should know better. What kind of society are they trying to create with this? These companies have nothing to fear. Even if the masses actually realized and start thinking about this problem, they're hardly in a position to do anything about it. The way our rigid systems are designed and work, I don't see it changing for at least decades, if not centuries. But I wish these brands stop pushing on the narrative front in the meantime. In fact, the only thing that will change is make them more trustworthy in the eyes of wise people in the society, that's what I think.

      Hi everyone!

      I've been using Vox for about a year now to listen to music and while there are some good qualities to it, I'm honestly fed up with the lack of volume normalisation and having to constantly adjust my volume manually (There's heaps years old of threads on their forums requesting or complaining about this). So here I am looking for a replacement and was wondering if anyone has a setup that I could copy. Here are the requirements that I have:

      • I can stream my own music library of high quality music (FLAC format).
      • It provides volume normalisation.
      • I can set my whole library to shuffle.
      • Native macOS client.

      I've been doing some looking around and so far the most likely solution will be for me to set up a Gonic server at home and use Strawberry Music Player on my laptop. A close second contender was Youtube music but they don't provide a native client and I currently use a combination of keyboard shortcuts and applescripts to manage playback (I found media keys insufficient but that's a topic for another post).

      I am currently paying a subscription fee for Vox so I don't mind if I have to pay for the new player, I'd prefer a service like that for ease of use rather than rolling out my own.

      For posterity I'm posting what I ended up doing. I tried Roon and while it looked and felt amazing, the ability for streaming out of home is very limited, it's intended to stream within a local network. It appears you can only do remote streaming to a mobile device and requires a custom port to be forwarded, I wanted to put this behind a reverse proxy but was not able to do that (Seems it's not supported).
      I did not try Plexamp, after all the work I did to get Gonic set up properly it felt like I was doing too much work myself to pay for a solution. Ideally I wanted something that would "just work" even if it wasn't free but no solution did that. If I had access to a free trial I would have probably tested it as well.
      I already had Gonic working within my home network going into this but setup of it is still trivial. The bulk of the work came in setting a dynamic DNS set up, and a reverse proxy (NPM) inside my network to provide HTTPS support with Letsencrypt certificates for Gonic (It's only HTTP). I spend too much time trying to have a secure setup (Crowdsec + Cloudflare) but after ditching that, I'm still happy with it and looking at logs it does not appear there's any significant risk to my network (I'm also using a geoip block to outright block requests from some countries).
      As far as clients go, I settled with Strawberry. Tried the following:

      • Sonixd: It had limited hotkey functionality and doesn't seem to be actively developed anymore.
      • Submariner: Did not work.
      • Clementine: Current version crashes on launch, rc version complaints about wrong credentials when connecting to the server.

      I'm a solo freelance programmer who codes on small to medium sized projects, and I realize that I can upskill myself a lot by keeping up with the industry trends, by listening to what the best in this field have to say. The problem is that there is just so much information overload everywhere, just so many youtube videos and articles that it seems overwhelming to differentiate the wheat from the chaff!

      Since reading is my preferred medium of instruction, I want to know what are the blogs, journals, etc. on this topic with some street cred? And preferably individual experts and blogs, not companies. Company or corporate sites and blogs seem to be more hype than substance these days.

      Which ones do you refer for keeping up to date?
