Now that it is finally fall weather in the Midwest, I have been back to making stews/soups.
My current go-to’s are Zuppa Toscona, Pozole Rojo, and I just made some Kartoffelsuppe (German Potato Soup with Sausage), but I’m looking for more! Any stew-like meal that’s hearty and warm - I like to make a big batch Monday night & eat it for lunches throughout the week, so preferably ones that reheat OK.
I love the Dapanji I’ve had from a local place with hand-pulled noodles, but that seems a bit out of my skill level or comfort-zone to try to make.
What are some of your favorite stews (preferably with recipes)?

Ingredients
Ingredients:
- 2 Pounds Low-starch potatoes , washed, eyes removed and sliced into 1/4 inch disks. Peeling is optional.
- 2 Pounds Hot and/or Sweet Italian Sausage Links
- 1 Large Bunch Kale (it looks like a lot but will cook down)
- 1 Large Yellow Onion, diced small
- 2 T Garlic, mashed. Approx 8 cloves (see instructions)
- 8 Ounces Half and Half
- 4 Cups Reduced Sodium Chicken Stock
- 6 Cups Water
- 1/2 Teaspoon Ground Red Pepper (to taste)
- 3/4 Teaspoon Kosher Salt (to taste)
Instructions
- Fill a large pot with water, bring it to a rolling boil and add some salt – about the same amount of salt as if you were making pasta. Fill a large bowl with cold water and some ice. Put a large colander in the sink.
- Cut the base off the head of kale and roughly tear the leaves into 2″ pieces, discarding the hard portion of the rib, and place in the colander for later. Olive Garden leaves the rib in, but I think it’s too big and hard to put on a soup spoon.
- Place the garlic in a mortar and pestle with a heavy pinch of kosher salt and mash until liquid, or finely mince, then grind with the back edge of a knife. You need at least two heaping Tablespoons of mashed garlic when you’re done.
- Cut the raw sausage into 1/2 inch chunks with shears or a knife. Add a little oil to the bottom of a large pot. Add the sausage. Sauté on medium until fully cooked and you have developed a good deal of fond (brown stuff) on the bottom of the pot.
- Pour off grease as necessary and build as much fond as possible without burning or drying out the sausage.
- Remove the sausage and save. Pour off the excess fat, leaving just enough to coat the bottom of the pot.
- Drop all the kale into the boiling salted water. Wait a few seconds until the kale turns bright green, then immediately dump the boiling water and kale into the colander in the sink. Then dump the hot, drained kale into the bowl of ice water and swish it around. Dump the chilled kale into the colander to drain.
- Add the finely diced onions and sauté on medium until soft, nicely browned, and more fond develops.
- Add the garlic and continue stirring until just fragrant and soft (probably about a minute). Be careful to not to burn or brown the garlic. Add the ground red pepper and mix.
- Add a small amount of water and deglaze the bottom of the pot (scrape up all the yummy brown bits).
- Add the rest of the water, the chicken stock, the potatoes and sausage.
- Bring to a slow simmer and continue simmering until the potatoes are soft.
- Add the kale then turn off the heat.
- Immediately before serving, add the half and half, and serve with some nice home-baked Ciabatta bread.

- 19 ounce package Ground Turkey or Chicken 93% Fat Free
- 1 Onion, chopped
- 1 Jalapeño chile, seeded and minced
- 4 Garlic Cloves, minced
- 4 Cups Chicken Broth
- 3x 15.5 ounce cans Hominy – rinsed and drained.
- 1 28 Ounce Can Diced Tomatoes
- 1-2 Tbsp blended Canned Chile in Adobo – found in a can in the Mexican Food section of the grocery store
- 2 tsp Dried Oregano
Garnishes:
- 1/4 Cup Reduced Fat Cheddar Cheese, Shredded
- 4 Radishes, cut into matchsticks
- 3 Scallions thinly sliced on the diagonal
- 1 Avocado, ripe
- Red Pepper Flakes
- 1 Lime, cut into wedges
Instructions
- Take the can of Chiles in Adobo and puree in a blender, spice grinder or mortar and pestle.
- Heat the oil in a medium size pot until shimmering
- Add the Ground Turkey, Onion and Jalapeño and saute on medium until turkey is cooked and onion is soft but not browned. Add Garlic and cook until garlic is softened, but not browned.
- Add the Chicken Stock, Hominy, Tomatoes, 3-4 Tablespoons of mashed Chile in Adobo (to taste) and oregano, bring to a simmer, reduce heat and simmer uncovered until slightly thickened.
- Serve in bowls with the garnishes. Be sure to squeeze a lime wedge into each serving; it really wakes up the flavors and brings the dish to an entirely new level.
- Optional, add some Avocado slices.
- Serve with Chile in Adobo on the side for people who like it spicier.

German Potato Soup with Bratwurst is an easy comforting recipe to add to your soup rotation this fall. It takes just 30 minutes to cook, and celebrates German cuisine, even if you can't get to Octoberfest.

- 2-3 bratwurst, (or other German sausage)
- olive oil
- 4 cups chicken stock
- 1/2 medium onion, (peeled and diced)
- 2 stalks celery, (diced)
- 2 medium carrots, (peeled and diced)
- 4 white waxy potatoes, ((like baby reds or Yukon Gold), peeled and diced)
- 1/4 head cabbage, (chopped)
- 2 bay leaves
- 1 tsp dried marjoram
- salt and fresh cracked pepper, (to taste)
- chopped fresh parsley, (for garnish)
Instructions
- Put a drop of oil in a stock pot and brown off the sausages or brats. Let them get cook color on all sides, then add 2 cups of the chicken stock and bring up to a boil. Scrape any browned bits from the bottom of the pot. Lower the heat and simmer, covered, for about 10-12 minutes, until the brats are cooked. Remove the brats to a plate, and strain the broth and set aside. (I like to strain the broth because there will always be little bit and bobs floating around, and it's nicer without.) When the brats have cooled a bit, slice them.
- Meanwhile add a tablespoon of oil to a a new soup pot and saute the onions, celery, and carrots for about 4-5 minutes, just until slightly softened but not browned, stirring often.
- Add the potatoes, cabbage, and all 4 cups of the stock to the pan, along with the bay leaves, salt, pepper, and marjoram.
- Bring up to a boil, then lower the heat and simmer, partially covered, for 10-15 minutes, or until veggies are almost tender. Take a taste to be sure. Add the sliced brats and simmer for another 5 minutes until everything is perfectly tender.
- Taste to adjust the seasonings and serve hot with a sprinkle of fresh chopped parsley.
Notes
Variations:
Stir in some sour cream, off the heat, to the finished soup.
Season with caraway seeds.
Add a leek, trimmed, diced, and well rinsed.
Add peeled and diced celeriac or turnip.
Puree the finished soup to a creamy consistency before adding the sausage.
Brighten the flavor with a small touch of apple cider vinegar.

I have resubscribed to Netflix after cancelling about 6 months ago and I think there's been a change to the GUI which I really don't care for. I could be wrong but didn't the TV app use to work in the following way: after selecting a movie or television show, the first click would open a menu that would then allow further options including playing the movie or an episode of the TV show? I miss this. Currently, they're is one option at the to of my screen when I open the app that has a selectable 'More Info' option but everything else does not and the media just starts playing immediately upon selection.
I miss the 'menu on first click' behavior. Is there a way to get back to that?

She initially brought it up last weekend, right after a date night with fancy dinner and concert. I reacted very, very badly. I got no sleep that night and the next morning we continued the discussion which ended with, let’s try to make this work and check in on our feelings in a week.
We couldn’t really talk throughout the week because her long time friends were getting married this weekend and she was one of the groomsmen. One of the issues she had with our relationship was my codependency on her - not the first time this quality has been observed by her. Part of what I had hoped sparked another chance was talking about all the things I have actively been doing to break free of that. And that aside, it seemed correct to allow her to participate in the wedding plans without worrying about personal life drama.
Check in finally comes Sunday night and I hear what I had feared to hear. I am much better with my reaction this time. I still don’t understand the final (to her) reason why she thinks this won’t work out. For context this is her first romantic relationship. This is not my first but my previous ones were… I’ll just say that I just said yes to suitors even though I didn’t have strong feelings for them. For both of us we were unsure of a lot of things - sexuality, romance, all that, and it was something we’d both find out together. When she came to the conclusion that she is somewhere on the aroace side of the spectrum, I was okay with that. (I think a year ago I posted on Tildes talking about my experience as someone on the ace spectrum.) Her final conclusion is that she feels I could do better with a partner that accepts me for who I already am and can also show it better. I can’t convince her that wanting me to be more confident in myself isn’t changing me, that I don’t need all these things people expect in most relationships. I’m still a little upset that she mentioned the friends’ wedding vows and how she felt she could never give that to me. I don’t see why she thinks my happiness will be greater, because I am telling her that I would be content to just do things with her that current society typically only associates with couples - buying a house, chores, cooking for two. (I know roommates exist and they participate in such things sans maybe purchasing property. but I guess I want the long term feeling of safety over uncertainty.)
Pause: I believe that she doesn’t need a reason at all to end things. I can be upset and bargain but at the end of the day if she feels we will both be happier this way, that’s that. The door is open regardless.
Recognizing that, I still just feel… empty. I moved across the state to move into a new apartment with her. My only friends/aquaintances here are through her. My friend groups are all online, though I did reconnect with some high school friends after over a decade of not keeping touch. But I’m not close enough to most of those online friends to even talk about this to, hence typing it out into the internet void.
I also resent this claim that someone else can make me happier. I’m not saying there aren’t other fish in the sea, but I had never been in the market for fish. This was someone I met online 5+ years ago who I vibed really well with, who I asked out because I didn’t want this to end. It typically ends when they find a romantic partner or another person to talk to who currently shares the same fixation as them at a point in time. I’m not going to go out of my way to find someone who can fit that very particular mold. I already have plenty anxiety as it is because my mold feels alienated enough from society’s expectations of what a long term committed relationship should look like.
I don’t know why I can’t just sleep. I’m fortunate that living situation is not an issue. This is such a first world problem. It is almost 7 AM now and I’ll be getting up to feed the cats and tell her on her way out to pilates that I’d like for us to continue discussing when she’s back, which I hope she is open to.

Backlog Burner FAQ
What exactly is the Backlog Burner?
Your "backlog" is all those games you've been meaning to play or get around to, but never have yet. This event is an attempt to get us to collectively dig into that treasure trove of experiences, scratch some long-standing itches, and knock a few titles off our to-play lists.
It runs every May and November. New discussion topics will go up once a week during those months.
You do not need to sign up in advance -- the topics are open to all. If you would like to be included in the notification list, comment in this topic to be added.
How do I participate?
- Choose some games from your backlog and play them.
- Then tell us about your experiences in the discussion thread for the week.
That's it!
Optionally: you can play Backlog Bingo which is a fun way of cutting down the choices you have to make and playing games you might not have normally selected on your own.
Do I need to finish the games that I play?
Nope! Not at all.
There aren't really any requirements for the event so much as this is an incentive to get us to play games we've been avoiding starting up, for whatever reason. Play as much or as little as you like of a given game.
Try out dozens for ten minutes each or dive into one for 40 hours. There's no wrong way to participate!
Can I make multiple posts in the same topic?
Yes! Each discussion thread stays live for a full week, so feel free to make multiple comments in the topic as you play different games. This isn't considered
noise-- it's considered valuable participation in the event!
Backlog Bingo FAQ
Important: All data for your Backlog Bingo card is stored on your device, not the server. Clearing your browser data will delete your card. You can use the export feature to make backups or move your card between devices.
I'm a returning player. How do I reset my previous card?
If you've already created a card and wish to start over, click the
Settingsbutton in the header to access your card settings. Then click theResetbutton, and confirm the prompt. This will irrevocably delete your present card, allowing you to start fresh.Where is my data stored?
All data is stored by your browser in local storage. There are no accounts, and nothing is sent to the server, so it's privacy-friendly by design. This does mean that you are responsible for not deleting any browser data on
wescook.ca, either manually or through automatic cleanups performed on browser close.Backlog Bingo is open-source, and licensed permissively under MIT.
What is the difference between the "Standard" and "Golf" modes?
In Standard Mode, each square on the bingo card corresponds with one single game. Duplicate games cannot be entered into different squares. A winning card would have a row of five different games that each filled in one square.
In Golf Mode, duplicates are not only allowed -- they are encouraged! The purpose of Golf mode is to try to find a single game that will fill multiple categories at the same time. For example: Stardew Valley might fulfill

That is the "wildcard" or "free space."
In Standard Mode, there are no requirements to fill it. You can choose any game you want! Anything goes!
In Golf Mode, it does not need to be filled. Because Golf is all about stacking up categories on a single game, any game used in Golf would fill it automatically, meaning it has no real function. As such, the square will be pre-filled for you if you play in Golf mode.
The new
Freelist defaults to having this space turned off. Because you already have full freedom in how you fill the squares, having a free space is redundant (though if you miss it or just like the aesthetics, you can certainly turn it back on!).Can I create custom bingo categories for this, or other events?
Absolutely! The Backlog Bingo app reads in simple JSON files which define the available categories. We've created a couple prebuilt lists for this event, but you're free to tweak our categories, or create completely new ones. You could even use them for books, anime, movies, recipes -- anything!

I've been working through my read list and for a while everything was either phenomenal or good enough to entertain.
Then this one. My goodness. I don't like the author. I don't like the narrator. I don't like the other of two characters in the story (so far). I'm piqued by the central mystery, but I can just tell that this is one of those stories where the mystery is going to remain an abstract MacGuffin around which the characters and their flaws are explored. I can't imagine any of this will turn around, but I'm on chapter 3 and about a third of the way through.
So now I'm faced with the choice to finish or abandon. I've been trying to finish it because a friend of mine mentioned having a personal policy of finishing every book she starts, and I am inspired by that. But so far it's just lead to reader's block.
I'm going to get through it, because I'm stubborn, but I don't think I'll enjoy it. Has anyone else ever hate-read a story? What was it? I'm happy to share the one that spawned this thread but only if people want to hear about a book that I've judged in the first third.
(this is all light-hearted, I wouldn't read it if I really hated it that much)
